4 tablespoons 2% low-fat milk (or light cream)
1/2 teaspoon vanilla extract
1/3 cup banana, diced (approx. half a medium banana)

Steps:

  • Preheat oven to 400°F Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, sugar, baking powder, salt and ginger. Cut butter into a few chunks and rub it into the flour mixture with your fingertips.
  • Mix milk and vanilla in a small glass. Pour about 4 tablespoons into the flour mixture and stir until the mixture starts to come together. Add the banana chunks and continue to stir, adding more milk if necessary, until dough comes together.
  • Pat dough into a disk about 1 inch thick. Cut into four sections with a knife and place each on baking sheet.

1/3 cup heavy cream, plus more for brushing
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/3 cup packed dark brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) cold unsalted butter, cut into pieces
2 1/4 ounces bittersweet or semisweet chocolate, chopped (about 1/2 cup)
1 1/4 ounces (about 1/2 cup) hazelnuts, toasted, skinned, and finely chopped (see Cook's Note)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a small bowl, whisk together the banana, cream, egg, and vanilla. In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
  • Cut in the butter with a pastry blender, or 2 knives used like scissors, until the mixture resembles coarse meal with some larger pieces. (You can use your fingers if you work fast enough that the butter stays cold.) Toss in the chopped chocolate and hazelnuts.
  • Drizzle in the banana mixture and stir with a fork until the mixture is crumbly and moistened, but stop before you've mixed it into a uniform batter. Tip out the mixture onto a parchment-lined baking sheet and pat it into a 6-inch circle. Using a sharp knife or a bench scraper, cut the circle into 8 equal triangles. (At this point, you could freeze the triangles well-wrapped on their sheet for another day. Bake them from frozen.) Spread the triangles apart and brush the tops with the cream. Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicon mat (such as Silpat®).
  • Combine 2 3/4 cups flour, brown sugar, baking powder, cinnamon, and salt in a medium bowl; stir to blend. Toss in cold butter and cut it into the dry mixture with a pastry cutter until mixture resembles coarse crumbs.

I made these up this morning when we were looking for a different flavour of scone for breakfast - and well, the very ripe bananas were calling me! I went easy on the sugar in the scones, and I sprinkled the top with Turbinado Sugar and oats to mimic a cruchy topping. These are not your typical buttery scones, but hearty, healthy, and hold you till lunch scones! If you don't have cinnamon chips, add a tbsp brown sugar, or you might wish to add raisins or chocolate chips, if you like your banana bread that way. This is my basic scone formula - I just change up the fruit and nuts to keep it interesting!

1/2 cup oatmeal, preferably large flake but quick oats will work
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tablespoon brown sugar, packed (optional)

1 banana, ripe, mashed
1/4 cup cinnamon baking chips
1/4 cup walnuts, chopped

  • Heat oven to 400.

Steps:

  • Place chopped banana into a small bowl, cover with pineapple juice, and let sit for 15 to 20 minutes.

1/2 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
12 tablespoons cold butter or 12 tablespoons margarine
2/3 cup very ripe banana, mashed
1 cup banana yogurt or 1 cup sour cream
1 egg yolk
3/4 cup miniature chocolate chip
3 semi-sweet chocolate baking squares, chopped into small pieces
1/4 cup whipping cream
1 (8 ounce) package whipped cream cheese

Steps:

  • Preheat oven to 350°F
  • Combine the first 5 ingredients in bowl.
  • Cut in the butter until the size of peas.
  • Add the yogurt or sour cream, egg yolk, bananas and chocolate chips.
  • Combine into ball. Flour a surface and knead gently until it comes together.
  • Grease a cookie sheet. Place ball in centre of sheet and pat down to form a disk, about 2 1/2 inches high (approx).
  • Cut dough in half and then in half the other way (now you have 4 pieces. Now repeat again. So now you have 8 triangles.
  • Pull trianges out from each other so they are not touching too much. This will give you lots of nice crust.
  • Bake for about 20 minutes. Time depends on how thick you made the scones. To test for doneness -- check the centres where they touch. If firm, they should be done.
  • For Chocolate Glaze:.
  • When scones are done, put some mini choco chips on top of the scones. Leave for 5 minutes, then spread over top.
  • OR.
  • For Chocolate Cream Cheese:.
  • Heat chocolate and cream until chocolate is melted.
  • Cool to room temperature.
  • Stir into whipped cream cheese.
  • Serve along side scones. YUMMY!

1 cup mashed bananas (2 medium)

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • In large bowl, mix flour, brown sugar, baking powder, cinnamon and salt. 1/3 cup soya milk, vanilla or 1/3 cup milk
1 banana, ripe & mashed
