BANANA CASSEROLE
A Cuban dessert recipe adapted from Bake Until Bubbly by Clifford Wright. This could be adapted to individual ramekins--that way you could downsize the recipe. You could also add more caramel sauce and whipped cream. I have changed this a bit after looking at Chef#296809's excellent suggestions.

Steps:
- Preheat oven to 350 degrees.
- Microwave 4 tablespoons of the butter in small dish until melted; add the raisins and brandy and let the raisins "plump up".
- Lightly butter a 2 quart baking casserole.
- Use the remaining butter to "butter" the bananas.
- Arrange half of the banana halves in the casserole.
- Sprinkle half of the brown sugar on top.
- Sprinkle with half of the raisin mixture and all of the pecans.
- Repeat the layering with the remaining ingredients.
- Bake until bubbling, about 30 minutes.
- Let rest 5 minutes, then serve hot.
Tips:
- Choose the right bananas. For best results, use ripe, firm bananas that are yellow with a few brown spots. Avoid bananas that are green or have too many brown spots, as these will not have as much flavor.
- Use quality ice cream. The type of ice cream you use will make a big difference in the flavor of your casserole. Choose your favorite flavor of ice cream, but make sure it is a high-quality brand that is well-frozen.
- Don't overmix the casserole. When you are mixing the ingredients for the casserole, be careful not to overmix it. Overmixing will make the casserole tough and dense. Mix the ingredients just until they are combined.
- Bake the casserole until it is golden brown. The casserole is done baking when it is golden brown on top and the center is set. This usually takes about 30-35 minutes.
- Serve the casserole immediately. Banana split casserole is best served immediately after it is baked. This will allow the ice cream to stay cold and the casserole to be at its best flavor.
Conclusion:
Banana split casserole is a delicious and easy-to-make dessert that is perfect for any occasion. With its creamy, flavorful filling and crunchy topping, this casserole is sure to be a hit with everyone who tries it. So next time you are looking for a special dessert to make, give banana split casserole a try. You won't be disappointed!
