When my kids were small, I'd stuff leftover chicken into these oven-baked quesadillas. I often grab rotisserie chicken instead. -Pam Martin, Canandaigua, New York

Time 55m

Number Of Ingredients 8

4 8-inch flour tortillas
1 c mexican cheese blend
1 can(s) diced green chiles, drained
18 oz refrigerated barbecue sauce
2 c shredded chicken
1 c salsa
1/4 c sour cream
1/4 c sliced green onion

Steps:

  • 1. Take boneless chicken breast, wrap in foil and place in a glass bake pan. Bake for 40 minutes. Shred chicken with two forks and add to barbecue sauce. Spray the tortillas with cooking spray to keep them from sticking to the pan and make them a little crispier. Coat only one side and place (coated side down) on a cutting board or waxed paper. Sprinkle 1/4 cup of cheese over half of each tortilla. Top with green chiles and barbecue sauce with chicken. Fold tortillas in half, pressing gently. Preheat oven to 350. In a hot 10-inch skillet cook quesadillas, two at a time, over medium heat for 6 to 8 minutes or until golden brown, turning once. Place quesadillas on a baking sheet. Keep warm in preheated oven for up to 30 minutes. Repeat with remaining quesadillas. Cut each quesadilla into 3 wedges. Serve with salsa, sour cream, and green onion.
  • 2. Bacon, Tomato, & Avocado Quesadillas: Prepare as above, except substitute cheese for cheddar; use 8 crisp-cooked and crumbled bacon slices, 2 small seeded and coarsely chopped tomatoes, and 1 seeded, peeled, and chopped avocado for the filling. Omit the green chiles, barbecue sauce with chicken, salsa, sour cream, and green onion.

Tips:

  • Choose the right tortillas. Corn or flour tortillas can be used for quesadillas, but corn tortillas are the more traditional choice. Corn tortillas also have a lower glycemic index than flour tortillas, making them a healthier option.
  • Shred your cheese. Pre-shredded cheese is convenient, but it doesn't melt as well as freshly shredded cheese. Shredding your cheese at home also ensures that you're getting the type of cheese you want.
  • Use a variety of fillings. Quesadillas can be filled with just about anything, so get creative! Some popular fillings include chicken, beef, pork, veggies, and beans.
  • Don't overload the quesadillas. Too many fillings will make the quesadillas difficult to fold and cook evenly.
  • Cook the quesadillas over medium heat. This will help to prevent the tortillas from burning.
  • Serve the quesadillas with your favorite toppings. Some popular toppings include salsa, guacamole, sour cream, and Pico de gallo.

Conclusion:

Quesadillas are a delicious and easy-to-make meal that can be enjoyed by people of all ages. With a variety of fillings and toppings to choose from, there's a quesadilla for everyone. So next time you're looking for a quick and easy meal, give quesadillas a try!
