Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

1.5 ounce Bacon Fat-Washed Bourbon
3 ounce Tomato Juice
Squeeze of Lemon juice
Dash of Worcestershire Sauce
Fresh Cracked Pepper
Pinch of Celery Salt
Pinch ground Horseradish
Iceberg Lettuce Foam, recipe follows
1 pounds package of Bacon strips
2 or 3 Cups Bourbon
1/2 teaspoon Lecithin
1 Egg White
1 head of Iceberg Lettuce

Steps:

  • Cook bacon. Reserve rendered fat. Combine the melted fat (still warm and liquid-y) with the bourbon. Stir until well incorporated. Transfer mixture to the freezer for several hours or until the fat has settled on the top and hardened. Once frozen, break the hardened off and double strain the bourbon into a separate container.
  • To assemble combine fat-washed bourbon, tomato juice, Worcestershire sauce, pepper, salt, and horseradish. Shake and strain into a chilled beer glass. Garnish with the iceberg lettuce foam.
  • For the garnish: dunk a Romaine lettuce leaf into the drink, leaving enough to poke out the top of the drink. Skewer bacon around a cherry tomato and a black olive.
  • Chop up iceberg lettuce into big chucks. Add 1/2 cup of water and muddle until broken down. Strain and reserve liquid. Combine Lecithin, egg white, iceberg lettuce water. Transfer to the tube of a CO2 hand-held foaming device.

3 pieces lettuce
1/2 tomatoes, sliced
1/3 avocado, sliced
1 tablespoon mayonnaise

1 drop red food coloring

I pull out and discard all the soft white centers from baguettes, leaving two cano-shaped halves. This hollowed out bread is then packed full and doused with a generous splash of "house" dressing. Closing one of these sandwiches is like shutting an overpacked suitcase!

1 good quality fresh baguette, split lengthwise in half,but not separated,soft centers removed
5 tablespoons hellmann mayonnaise or 5 tablespoons aioli
3 tablespoons basil pesto
10 slices bacon, cooked until crisp
2 large good quality tomatoes or 4 small good quality tomatoes, preferably beefsteak
1 head red leaf lettuce, leaves separated,washed,and dried
1/4 cup balsamic vinegar
3 tablespoons sugar
2 tablespoons Dijon mustard
1/2 teaspoon soy sauce
1/2 cup extra virgin olive oil

Steps:

  • First make the house dressing, by combining all ingredients in a blender except for the olive oil.
  • With the motor running, very slowly drizzle in the olive oil and mix until it is fully combined.
  • Under a broiler or on a griddle, lightly toast the inside of the baguette.
  • Combine the mayonnaise and pesto.
  • Spread the pesto mayonnaise all over the inside of both halves of the baguette.
  • Lay the bacon along the length of the bottom half of the bread.

1 lb round boule bread
4 tablespoons olive oil, divided
3/4 teaspoon italian seasoning
6 inches round wheel brie cheese (17 ounce)
1/2 cup balsamic vinegar
1 tablespoon sugar
2 tomatoes, diced
2 garlic cloves, minced
2 tablespoons diced basil
3 cups shredded romaine lettuce
8 sliced bacon, cooked and crumbled
3 scallions, green parts only, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Using a pointed serrated knife or other sharp knife, cut the top of the bread off, using the Brie wheel as a guide for the size of the circle.
  • Cut the top of the bread into rough cubes and place on a baking sheet. Pull more bread out of the center where the cheese wheel will be placed. Tear the bread into chunks and place on the baking sheet with the other cubes. Drizzle the cubed bread with 2 tablespoons olive oil and season with italian seasoning, salt and pepper. Toss to combine, then push to one side of the baking sheet, making room for the boule.
  • Carefully cut the skin off the top of the cheese, then nestle the cheese in the center of the boule. Place the boule on the baking sheet with the cubed bread and bake until cubes are toasted and cheese is melted, about 15 minutes.
  • In a small saucepan over medium heat, combine balsamic vinegar and sugar. Bring to a simmer and reduce by half to make a syrup. Remove from heat and let cool slightly.
  • In a medium bowl, combine the tomatoes, 2 tablespoons olive oil, garlic, basil, salt and pepper.
  • To finish, top the melted cheese with shredded lettuce. Use a slotted spoon and top the lettuce with the tomato mixture, then top with the chopped bacon. Drizzle over the balsamic reduction and sprinkle over scallions for garnish.
