1 c. all-purpose flour
1 tsp. baking powder
1 pinch kosher salt ((large pinch))
1 c. granulated sugar (plus 1 Tb.)
8 Tb. unsalted butter, softened
2 large eggs
2 large ripe peaches, pitted (with skin), halved & cut into quarters ** (see notes)
2 tsp. lemon juice
1 Tb. ground cinnamon

Steps:

  • Heat oven to 350 degrees.
  • Sift flour, baking powder and salt; set aside.
  • Add butter and sugar to the bowl of a large stand mixer (or use a hand mixer) and mix on medium speed until light yellow in color (a few minutes should do the trick).
  • Add the sifted ingredients to the bowl, mix gently, then add eggs and mix until just combined.
  • Transfer batter to an ungreased 9" spring-form pan and spread evenly.
  • Cover batter with peach slices (arrange however you wish). Sprinkle with the remaining tablespoon of sugar, lemon juice, and cinnamon.
  • Bake until a cake tester comes out clean in the center and the cake is golden, 45-50 minutes. Remove from oven and cool, then unmold from pan. Serve with whipped cream, creme fraiche, or more sliced peaches.

2 cups fresh peaches
2 cups mini marshmallows
2 cups graham cracker crumbs
1/2 cup butter
1/2 cup sugar
1 1/2 cups Cool Whip

Steps:

  • Set aside 1/2 cups of graham cracker crumbs. Add melted butter and sugar to the rest of the graham cracker crumbs and press into an 8-inch square baking pan.
  • Chop peaches.
  • Heat marshmallow until soft over double boiler and mix in peaches. Remove from heat and stir in cool whip.

FILLING:
1 can (29 ounces) sliced peaches
1-1/4 cups sugar, divided
2 tablespoons cornstarch
1 package (8 ounces) cream cheese, softened
2 cups heavy whipping cream

Steps:

  • In a small bowl, combine graham cracker crumbs and brown sugar; stir in butter. Set aside 1/4 cup for topping. Press remaining crumb mixture onto the bottom and 1 in. up the sides of a greased 9-in. springform pan. , Place pan on a baking sheet. Bake at 350° for 10 minutes. 1 tablespoon cornstarch

12 prepared tart shells

1/2 cup oil
3 eggs
1/2 lemon, juice of
1 orange, juice of (combine lemon and orange juices to make 1/2 cup total citrus juice)
1 teaspoon vanilla extract
2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
4 peaches, fresh, blanched, peeled, and thinly sliced

Steps:

  • Grease a 13 X 9 pan. Preheat oven to 350°F.
  • Beat sugar with oil until thoroughly incorporated. Beat in eggs, one at a time. Add juice and vanilla extract.
  • In a separate bowl, combine flour with baking powder and salt. Add to sugar mixture, and stir.

Pastry for one-crust, 9-inch tart
4 to 5 ripe peaches (about 1 1/3 pounds), peeled and pitted
Juice of 1 lemon
1/2 cup finely chopped pecans
1/3 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon flour
1 tablespoon butter
3/4 cup heavy cream, whipped

Steps:

  • Preheat oven to 425 degrees. Roll out pastry and line a nine-inch tart pan. Prick the bottom, line with foil and weight with dry beans or pastry weights. Bake for about six minutes, until the pastry looks dry but has not begun to color. Remove foil and continue baking about six minutes longer, until the pastry is pale gold. Remove from oven and lower to 375 degrees.
  • Slice peaches uniformly about one-half-inch thick and toss in a bowl with lemon juice.
  • Combine pecans, brown sugar and cinnamon. Mix half this mixture with the flour and spread on the bottom of the tart shell. Arrange the peaches slightly overlapping in a pattern over the pecan mixture. Sprinkle with the other half of the pecan mixture and dot with butter.

1 teaspoon unflavored gelatin
6 large egg yolks
1/3 cup sugar
3 tablespoons kirsch (clear cherry brandy)
3 1/2 ounces white chocolate, chopped
1 1/2 cups chilled whipping cream
1 cup finely chopped pitted peeled peach
4 peaches, peeled, thinly sliced
1/4 cup powdered sugar

Steps:

  • Preheat oven to 375 degrees.
  • Coarsely chop nuts with brown sugar, flour and salt in processor.
  • Add butter; process until nuts are finely chopped.
  • Press half of mixture over bottom of 9-inch diameter springform pan with 2 3/4-inch-high sides.

  • Sprinkle gelatin over; let stand until gelatin softens, about 10 minutes.
  • Whisk yolks, sugar, kirsch and 3 tablespoons water in medium metal bowl until blended.
  • Set bowl over saucepan of simmering water; whisk constantly until mixture registers 160 degrees on candy thermometer, about 4 minutes.
  • Remove bowl from over water.
  • Add gelatin, then white chocolate and whisk until gelatin dissolves and chocolate melts.
  • Let stand until mixture is cool but not set, whisking occasionally, about 10 minutes.
  • Beat cream in large bowl until soft peaks form.
  • Fold yolk mixture into cream.
  • Spread 1/3 of mousse over crust in springform pan.
  • Sprinkle half of chopped peaches over.
  • Sprinkle half of crumbs over peaches.
