1 small onion, finely chopped
1/2 cup chopped fresh cilantro
1 to 2 jalapeno pepper, seeded and finely chopped

1 garlic clove, minced
1/4 teaspoon salt

  • In a medium bowl, combine all ingredients. Cover and refrigerate for 1-2 hours before servings.

6 plum tomatoes, seeded and diced
1/2 cup minced onion
1 jalapeno chile, minced (seeds and ribs removed for less heat)
2 tablespoons fresh lime juice

  • In a bowl, combine tomatoes, onion, jalapeno, and lime juice; season with salt, and mix to combine. Let stand 15 to 30 minutes to allow the flavors to develop.

Pinch of sugar
2 medium tomatoes, seeded and chopped
1/2 medium sweet onion, finely chopped
1 jalapeno, seeded, ribs removed and finely chopped
1 avocado, halved, pitted, peeled and cut into small cubes
1 lime, juiced
3 tablespoons chopped fresh cilantro

Steps:

  • In a small bowl, mix 1 teaspoon salt with the pinch of sugar. In a medium bowl, toss the tomatoes gently with the salt mixture. Add onion and jalapeno and combine.
  • Place the avocado on top of the tomato mixture and squeeze with lime juice to coat the avocado.
  • Sprinkle on the cilantro, and stir to combine. Serve.
