1 Pound Roma Tomatoes, diced
1/2 Cup Onions, chopped
1/2 Cup Basil, julienned
2 Medium Garlic Cloves, minced
2 Tablespoons Olive Oil
Salt and Pepper, to taste
1/4 Cup Parmesan Cheese, shredded off the block (optional)

Steps:

  • Preheat the oven to 350°F.

1 teaspoon fresh lemon zest
1 teaspoon salt, plus more for bread

8 slices French baguette, sliced 1/2-inch thick
Extra-virgin olive oil, for drizzling
4 whole cloves garlic
8 cherry tomatoes, quartered

1 tablespoon olive oil
1 large onion, chopped
1 teaspoon sugar
1/4 cup chopped fresh basil (NOT dried)
1 French baguette
