2 tablespoons butter
1 small onion, chopped
5 whole cloves
7 whole cardamom pods
2 bay leaves
15 black peppercorns
1 cinnamon stick, broken in two pieces
1 1/2 teaspoons whole cumin seeds
2 cups basmati rice
3 1/2 cups water
2 teaspoons salt
1 pinch saffron
1/2 cup frozen peas

Steps:

  • In a large pot, melt the butter and saute onion until translucent.
  • Add cloves, cardamom pods, bay leaves, peppercorns, cinnamon and cumin seeds.
  • Saute two to three minutes.
  • Add rice, water, salt, saffron and peas.
  • Bring to a boil, then cover and reduce heat to simmer.
  • Cook with lid on for 20 minutes.
  • Turn off heat and let sit for five minutes with lid on.
  • Fluff with fork before serving.

5 cups zafarani cooked basmati rice (cold)
3 tablespoons oil, divided
2 large eggs, beaten
3 tablespoons Kikkoman soy sauce
1 medium spring onion, thinly sliced
1 teaspoon fresh ginger, finely chopped
1 cup frozen peas
1 large carrot, peeled, finely cubed

Steps:

  • Heat half the oil in a wok or large frying pan. Pour in the eggs and soy sauce and cook stirring constantly until.

  • Toast 3/4 teaspoon crushed cumin seeds in 1 tablespoon butter in a saucepan over medium heat, about 1 minute. Stir in 1 cup rinsed basmati rice and 1 cinnamon stick.
