CARAMEL AND ALMOND POPCORN

Caramel and Almond Popcorn image

Kids and adults alike will love munching on homemade caramel corn at a summer party.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes 1 1/2 gallons

Number Of Ingredients 8

3 cups whole shelled almonds (about 1 pound)
1/2 cup (1 stick) unsalted butter, cut into pieces, plus more for pans and spoon
1/2 cup light corn syrup
2 1/2 cups light-brown sugar, packed
1 teaspoon pure vanilla extract
1 fourteen-ounce can sweetened condensed milk
1 teaspoon salt
1 1/4 gallons popped popcorn (1 cup raw kernels)

Steps:

  • Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet, and toast until lightly golden and fragrant, about 10 minutes. Remove from oven; let cool completely. Generously butter two roasting pans, and set aside.
  • Combine butter, corn syrup, and brown sugar in a medium heavy-bottomed saucepan, and place over medium heat. Bring mixture to a boil, stirring constantly; stop stirring, and cook 3 minutes more. Add vanilla extract and reserved toasted almonds; continue cooking 1 minute more. Remove from heat, and stir in condensed milk and salt.
  • Place popcorn in a large bowl, and drizzle caramel mixture all over the top. Using a large well-buttered metal spoon, immediately toss to distribute evenly and combine. Divide between prepared pans.
  • Bake 7 minutes. Remove from oven, and stir mixture to allow it to cook evenly. Return to oven; bake 7 to 8 minutes more. Transfer to a wire rack to cool completely. Break apart clusters; serve.

Tips:

  • Choose the right popcorn. Use popping corn that is specifically made for popping. This will ensure that your popcorn pops properly and has a light and fluffy texture.
  • Use a large pot or Dutch oven. This will give the popcorn plenty of room to pop. If you use a pot that is too small, the popcorn will be more likely to burn.
  • Add oil and popcorn kernels. You will need about 1/4 cup of oil and 1/2 cup of popcorn kernels. You can use any type of oil, but olive oil or coconut oil are good choices.
  • Cover the pot and turn on the heat. Heat the pot over medium-high heat. Once the oil is hot, cover the pot and shake it vigorously for a few seconds. This will help to distribute the popcorn kernels evenly and prevent them from burning.
  • Remove the pot from heat when the popping slows down. Once the popping slows down to about 2-3 seconds between pops, remove the pot from heat. This will prevent the popcorn from burning.
  • Season the popcorn. You can season the popcorn with any variety of seasonings, such as salt, pepper, garlic powder, or chili powder. You can also add sweet seasonings, such as cinnamon sugar or chocolate chips.

Conclusion:

Making BBQ popcorn and almonds is a simple and delicious way to enjoy a snack. With just a few simple ingredients, you can create a flavorful and crunchy treat that is perfect for parties, movie nights, or any other occasion.

These recipes are easy to follow and can be customized to your liking. Experiment with different seasonings and toppings to create your own unique flavor combinations. So next time you're looking for a tasty snack, give BBQ popcorn and almonds a try.
