CLASSIC CORNBREAD

Classic Cornbread image

Matt and Amy Bell, owners of the restaurant South on Main, usually avoid cooking contests. But the cornbread festival was different. "It's more of a community project than a competition," Matt says. "And it's directly outside the restaurant." The pair won the traditional category with their classic cornbread, a recipe developed by Amy's grandmother Nellie Mae. "You don't dare mess with family recipes," Matt says. "And if you do, you better make sure they can't tell."

Tips:

  • Choose the right cornmeal. Stone-ground cornmeal gives cornbread a more rustic, nutty flavor, while finely-ground cornmeal produces a more tender, cake-like texture. You can also use a combination of both for a delicious balance.
  • Use fresh, high-quality ingredients. This will make a big difference in the overall flavor of your cornbread. Look for fresh corn kernels, sweet cream, and real butter.
  • Don't overmix the batter. Overmixing will make the cornbread tough. Mix just until the ingredients are combined.
  • Bake the cornbread in a hot oven. This will help it rise quickly and evenly. A preheated oven at 400°F (200°C) works well for most cornbread recipes.
  • Let the cornbread cool completely before cutting it. This will help it hold its shape and prevent it from crumbling.

Conclusion:

Cornbread is a delicious and versatile side dish that can be enjoyed with a variety of meals. With so many different recipes to choose from, there's sure to be a cornbread that everyone will love. Whether you prefer a classic Southern-style cornbread or a more modern take on this classic dish, you're sure to find a recipe in this article that you'll enjoy.
