I love to make bread and have baked many, many dozens of these rolls over the years. I've given the recipe to numerous friends, and they all agree these light-textured rolls are outstanding.

Yield 3 dozen.

Number Of Ingredients 11

2 cups boiling water
1 cup quick-cooking oats
2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
2 eggs, beaten
1/2 cup molasses
1/2 cup vegetable oil
1/3 cup sugar
1/2 teaspoon salt
5-3/4 to 6-1/4 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, combine boiling water and oats; cool to lukewarm (110° to 115°). Meanwhile, dissolve yeast in warm water; stir into oat mixture. Add the eggs, molasses, oil, sugar and salt. Add enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Divide into 36 pieces and shape into rolls. Place on greased baking sheets. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 20-25 minutes. Brush with butter. Cool on wire racks.

2 tablespoons sugar
½ teaspoon salt
½ cup milk
¼ cup water

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough.   • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.

2 1/4 cups unbleached bread flour or 2 1/4 cups all-purpose flour
2 tablespoons unsweetened dutch cocoa
1 (1/4 ounce) package active dry yeast
1 cup water
1/3 cup orange juice
1/3 cup honey
1/4 cup butter, cut into pieces
3 tablespoons sugar
1 teaspoon salt
2 1/4 cups whole wheat flour
melted butter

Steps:

  • To prepare the dough: In large bowl, combine 1 1/2 cups of the bread flour, the cocoa powder and yeast.
  • In medium saucepan, heat and stir water, orange juice, honey, the 1/4 cup butter, sugar and salt just until warm (120 degrees F to 130 degrees F) and butter almost melts.
  • Add water mixture to flour mixture.
  • Beat with an electric mixture on low to medium speed for 30 seconds, scraping sides of bowl constantly.
  • Beat on high speed for 3 minutes.
  • Using a wooden spoon, stir in whole wheat flour and as much of the remaining bread flour as you can.
  • Turn dough out on a lightly floured surface.
  • Knead in enough remaining bread flour to make smooth, elastic, and moderately soft dough (3-5 minutes total).
  • Shape into a ball.
  • Place in a lightly greased bowl, turning once to grease surface.
  • Cover, let rise in a warm place until double in size (about 2 hours).
  • To shape the rolls: Punch down dough.
  • Turn dough out onto a lightly floured surface.
  • Divide into nine or 10 portions.
  • Cover and let rest for 10 minutes.
  • Meanwhile, lightly grease a large baking sheet; set aside.
  • Gently pull each portion into a 5x2-inch oval roll, tucking edges under to make smooth tops.
  • Place on prepared baking sheet.
  • Brush rolls with melted butter.
  • Using a knife, make three diagonal cuts in the top of each roll.
  • Cover; let rise until nearly double in size (1 1/2 to 2 hours).

1 ½ cups warm water (75 to 85 degrees F, 25 to 30 degrees C)
1 tablespoon white sugar
2 tablespoons butter, softened
½ cup honey
2 cups bread flour
1 ⅔ cups whole wheat flour
1 tablespoon vital wheat gluten
1 tablespoon unsweetened cocoa powder
2 teaspoons instant coffee granules
1 teaspoon salt
2 ¼ teaspoons bread machine yeast
2 teaspoons sesame seeds for sprinkling

Steps:

  • Place the water, sugar, butter, honey, bread flour, whole wheat flour, vital wheat gluten, cocoa powder, instant coffee granules, salt, and yeast into the pan of a bread machine in the order recommended by the manufacturer. Set the machine for the dough setting, start, and allow machine to complete cycle.
  • Remove the bread pan with dough from the machine, and set pan into warm water (about 90 degrees F, 32 degrees C). Cover the top of the pan with a towel, and allow the bread to rise in the pan until doubled, about 1 hour.
