1 medium onion, chopped
4 clove garlic, minced
1 can(s) (28 oz.) tomatoes, undrained
8 c water
8 beef bouillon, cubes
1/4 tsp pepper
1/2 c orzo pasta, uncooked
2 c frozen peas & carrot mix
1 can(s) corn, drained

Steps:

  • 1. Cook beef, onion, and garlic in large saucepan over medium-high heat until beef is brown, stirring to separate meat; Drain fat.
  • 2. Puree' tomatoes with juice in covered blender or food processor. Add tomatoes, water, bouillon cubes and pepper to meat mixture. Bring to a boil; reduce heat to low. Simmer uncovered 20 minutes.
  • 3. Add orzo and vegetables, simmer 15 minutes more. Serve with crusty bread.

Tips:

  • Use high-quality beef broth. This will give your soup a rich, flavorful base. Avoid using bouillon cubes or canned broth, as they can be too salty and artificial-tasting.
  • Don't overcook the orzo. Orzo is a small pasta that can quickly become overcooked and mushy. Cook it for just a few minutes, until it is al dente (tender but still slightly firm).
  • Add vegetables to your soup. Vegetables add flavor, nutrients, and color to your soup. Some good options include carrots, celery, onions, garlic, and spinach.
  • Use fresh herbs. Fresh herbs can really brighten up the flavor of your soup. Add them at the end of cooking, so they don't lose their flavor.
  • Season your soup to taste. Add salt, pepper, and other seasonings to taste. You may also want to add a bit of red pepper flakes or cayenne pepper for a little spice.

Conclusion:

Beef orzo soup is a delicious, hearty, and easy-to-make soup that is perfect for a cold winter day. It is also a great way to use up leftover beef. With a few simple ingredients and a little bit of time, you can make a delicious soup that the whole family will enjoy.
