¾ pound ground turkey
¾ pound lean ground beef
1 small onion, chopped
1 cup milk
1 cup seasoned bread crumbs
1 large egg
1 teaspoon dried rosemary
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch loaf pan with cooking spray.
  • Combine ground turkey, ground beef, onion, milk, bread crumbs, egg, rosemary, salt, and pepper in a mixing bowl. Press into the prepared pan.
  • Combine ketchup, brown sugar, and mustard in a separate bowl and whisk together. Pour mixture over meatloaf.

1 pound untrimmed pork shoulder, cut into large strips
2 tablespoons smoked paprika
2 tablespoons sweet paprika
1/2 tablespoon minced garlic
3/4 teaspoon chili powder
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper
Pinch cayenne pepper
2 tablespoons extra-virgin olive oil
1/2 cup finely diced carrot
1/2 cup finely diced celery
1/2 cup finely diced sweet onion
Kosher salt
2 tablespoons minced garlic
1 1/2 pounds trimmed brisket, cut into large strips
1 1/2 pounds trimmed sirloin, cut into large strips
2 eggs, beaten
3/4 cup milk
2 cups large fresh breadcrumbs, from a Pullman loaf (see Cook's Note)
1/2 cup ketchup
1/4 cup plus 2 tablespoons jarred Guy Fieri Bourbon-Brown Sugar BBQ Sauce, plus extra for serving
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard powder
Kosher salt and freshly ground black pepper

Steps:

  • Place the grinder attachments and the pork shoulder, brisket and sirloin in the freezer. Chill until the meat is very cold but not yet frozen.
  • For the andouille blend: With a meat grinder, grind the chilled pork using the No. 2 dial. Transfer to a mixing bowl with the smoked paprika, sweet paprika, garlic, chili powder, salt, cumin, black pepper, crushed red pepper and cayenne. Mix well, then place in fridge to firm up.
  • For the vegetables: Heat the olive oil in a medium saute pan over medium-high heat. Add the carrots, celery, onions and a pinch of salt. Saute until softened, about 3 minutes. Add the garlic and saute until fragrant but not yet browned, 1 to 2 minutes more. Remove from the heat and let cool slightly.
  • Meanwhile, preheat the oven (or a grill) to 350 degrees F.
  • For the brisket meatloaf blend: Grind the chilled brisket and sirloin using the No. 2 dial. Add to a large mixing bowl.
  • In a medium bowl, whisk together the eggs and milk. Add the breadcrumbs and let soak. Add the breadcrumb mixture to the bowl with the brisket and sirloin. Add the cooled sauteed vegetables and the ketchup, 2 tablespoons BBQ sauce, hot sauce, Worcestershire sauce, mustard powder, 2 teaspoons salt and 1 teaspoon pepper. Mix thoroughly, being careful not to overwork.
  • Place a large sheet of foil (at least 24 inches) on a cutting board. Place the meatloaf blend on the foil and press into a roughly 8-by-12-by-1-inch rectangle. With your hands, roll the andouille blend into a cylinder the width (lengthwise) of the meatloaf. Place the cylinder on the meatloaf rectangle and form so the ends are flush with the sides of the rectangle. Starting from one of the long edges, roll the meatloaf over the andouille to encase it completely; press firmly to seal. Roll up the foil and seal by twisting the ends.
  • Transfer the meatloaf to a baking sheet. Bake on the center oven rack for 1 hour. Peel back the foil, spoon the 1/4 cup BBQ sauce over the top of the meatloaf, and return to the oven, uncovered. Cook for another 30 minutes so the meatloaf gets a nice crust and turns brown on the outside.
  • To serve, slice into thick medallions and serve with extra BBQ sauce on the side.

2 slices soft white sandwich bread, torn into small pieces (about 2 cups)
1/2 cup whole milk
1 1/2 pounds ground turkey
2 large eggs, lightly beaten
1/4 cup grated Parmigiano-Reggiano cheese
8 thin slices pancetta, finely chopped
1/2 onion, finely chopped
3 cloves garlic, chopped
1/4 cup ketchup, plus more for drizzling
1 cup loosely packed flat-leaf parsley leaves, chopped
1/2 teaspoon dried oregano
1/4 cup Italian-seasoned dry breadcrumbs
1/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the bread and milk in a large bowl and soak for 10 minutes. Add the turkey, eggs, cheese, pancetta, onion, garlic, ketchup, parsley, oregano, breadcrumbs, salt and pepper. 1 teaspoon salt
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper

½ teaspoon ground cumin

4 tablespoons butter
¾ cup chopped onion
½ cup chopped green bell pepper
¼ cup chopped green onions
4 cloves garlic, minced
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
½ cup evaporated milk
½ cup ketchup
1 ½ pounds ground beef
½ pound andouille sausage, casings removed
2 eggs, beaten
1 cup dried bread crumbs

Steps:

  • In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
  • Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
  • Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
  • Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

2 tablespoons olive oil
1 1/2 cups onions, finely chopped
1 teaspoon salt, plus a pinch
1/2 cup red bell pepper, finely chopped
2 teaspoons garlic, minced
1 tablespoon Worcestershire sauce
2 cups breadcrumbs (soft fresh)
1/2 cup milk
2 large eggs, beaten
1 lb andouille sausage (or other smoked sausage, cut into 1-inch chunks and coarsely chopped in a food processor)
1 lb ground beef (85% lean)
1 lb ground turkey
1/2 teaspoon dried sage
1 teaspoon dried thyme
1 teaspoon fresh ground black pepper
6 tablespoons Dijon mustard
3 tablespoons light brown sugar

  • Preheat the oven to 350°F Heat the oil in a large skillet over medium-high heat and add the onions with the pinch of salt. Cover and cook for 5 minutes, stirring occasionally. Upon discovering that I had defrosted both beef and turkey rather than 2 pounds of turkey, I took her recipe and added my own twists to make a tender and moist meatloaf. The listed amounts of spices and herbs yield a mild flavor so if you like more punch, you'll want to increase them. For better slicing, let the loaves rest after baking or they will crumble under your knife. Mashed potatoes and cranberry sauce make great side dishes with this recipe.

1 lb lean ground beef (I use 90/10%)
1 lb ground turkey (93/7%)
1 1/2 teaspoons poultry seasoning
2 tablespoons Italian parsley, chopped
2 slices bread, cubed
3/4 cup milk
2 eggs
2 tablespoons butter
1 small apple, peeled, cored & diced
1 small onion, diced
2 celery ribs, diced
1/2 teaspoon salt
1/4 teaspoon thyme, ground
water

Steps:

  • In a large bowl, mix the beef, turkey, poultry seasoning & parsley. Set aside.
  • In a small bowl, slightly beat the eggs then stir in the milk. Submerge the bread cubes, mixing gently to break them up.
  • In a medium fry pan, melt the butter then add the apple, onion & celery. Sprinkle with salt & saute until the onions are translucent.
  • Stir apple, onion, celery mixture into the meats then add the bread, milk & eggs.
  • Work the mixture gently (I use my hands) until well combined.
  • Divide in half & shape 2 loaves in a 9X13" baking dish.
  • Tent with foil and bake in a 350º oven for 45 minutes.
  • Remove from oven, pour off juices and reserve.
  • Return loaves to oven (minus their tent) for another 15 minutes or until juices run clear. Let rest for 5-10 minutes while you make the gravy.
  • Gravy:.
  • Strain reserved pan juices and if needed, add water to equal 1 cup.
  • Pour drippings & water into the pan you used to saute the apples/onions/celery. Whisk in the flour.
  • Cook and stir over medium low heat until gravy thickens. Stir in the ground thyme & cook for 2-3 minutes more. Salt and pepper to taste.
  • Slice the loaves into portions, top with the gravy and serve.

1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.
