Steps:
- In a large stockpot, melt the butter over medium heat. Add the carrots, peppers and 1/2 teaspoon salt and cook, stirring, until the vegetables are soft, about 5 minutes. Add the flour and cook, stirring, until well incorporated, about 5 minutes more.
- Add the chicken stock, beer and half-and-half and cook, whisking often, at a very slow simmer over medium-low heat for 15 minutes.
- Add the cheddar to the soup by the handful, whisking each batch until smooth. Add the Worcestershire, hot sauce, 1/2 teaspoon black pepper, the nutmeg, mustard and lemon juice, and stir to combine.
- Puree the soup in batches in a blender (holding a thick towel over the lid to prevent overflow) until very smooth.
- Just before serving, reheat the soup until steaming and taste for seasoning, adding salt as necessary. Ladle the soup into bowls and garnish each bowl with a swirl of mustard oil, a dollop of goat cheese and a sprinkle of thyme.
BEER AND GOUDA AND SOUP
A delicious rich, creamy soup with beer, Gouda, Cheddar, bacon and chives. Perfect for those chilly days. This is my copycat recipe of a dish I had at a popular chain restaurant, where it is served with warm pretzel sticks. I also like to serve it with a warm pretzel roll.

Tips:
- Selecting the right type of beer for your soup is crucial. Consider using a beer that complements the other ingredients, such as a dark beer for a richer flavor or a light beer for a more refreshing taste.
- Don't boil the beer. Adding beer to boiling soup will cause the alcohol to evaporate quickly, removing the intended flavor enhancement. Instead, add the beer towards the end of the cooking process to preserve its flavor and aroma.
- Use high-quality cheese. The type of cheese you choose will significantly impact the flavor of your soup. Opt for a good-quality Gouda cheese that melts well and has a rich, nutty flavor.
- Don't overcrowd the soup pot. When adding vegetables or other ingredients to the soup, avoid overcrowding the pot. This will prevent the vegetables from cooking evenly and may result in a watery soup.
- Season to taste. Always taste your soup before serving and adjust the seasonings accordingly. Add salt, pepper, or additional herbs and spices as needed to achieve the desired flavor.
Conclusion:
With careful selection of ingredients and attention to detail, you can create a delicious and memorable beer and Gouda soup that will impress your taste buds. Experiment with different beer and cheese combinations to find your favorite pairing. Whether you're looking for a hearty and comforting meal or a refreshing and flavorful appetizer, this soup is sure to satisfy. So, gather your ingredients, put on your apron, and let's get cooking!
