Time 3h

Yield 16

Number Of Ingredients 12

1 cup dried cannellini beans (or other small white beans)
6 large beets (about 2 pounds)
2 tablespoons olive oil (vegetable oil, or butter)
2 medium onions (halved and thinly sliced)
1 teaspoon salt (plus more to taste)
Optional: 3 cloves garlic (minced)
1 head green, Savoy, or Napa cabbage (cored and thinly sliced or shredded)
2 teaspoons caraway seeds
8 cups chicken broth (or beef or vegetable broth)
Optional: lemon juice (to taste)
Garnish: plain yogurt , sour cream, or crème fraîche
Garnish: fresh dill (chopped)

Steps:

  • Gather the ingredients.
  • Put beans in a large pot and add cold water to cover generously. Bring to a boil, cover, turn off heat, and let sit 1 hour.
  • Drain and return beans to pot. Cover again with cold water, bring to a boil, reduce heat to keep a simmer, and cook until beans are tender to the bite, about 20 minutes. Drain beans and set aside.
  • Meanwhile, preheat oven to 350 F. Wrap beets in a large sheet of aluminum foil, place on a baking sheet, and cook until tender when pierced with a fork, about 45 minutes. Let beets sit until cool enough to handle.
  • Peel beets (their skins should slip off easily after being roasted) and grate them on the large-hole side of a box grater. NOTE: Your fingers may get a little red, so wear gloves if you want to avoid stained hands. Set aside.
  • In a large pot over medium-high heat add oil, onions, and salt. Cook, stirring occasionally, until onions are soft, about 3 minutes.
  • Add garlic, if using, and cook until fragrant, about 1 minute.
  • Add cabbage, stir to combine, and cook, stirring occasionally, until cabbage wilts, 3 to 5 minutes.
  • Add caraway seeds and grated beets. Stir to combine.
  • Add broth and bring to a boil; reduce heat to maintain a steady simmer, add beans, and cook until vegetables are tender and flavors blend, 15 to 20 minutes. Add salt and lemon juice, if using, to taste. Serve hot, with a dollop of yogurt or sour cream and a sprinkle of dill, if you like.

BEET AND GINGER SOUP

Beet And Ginger Soup image

This beet and ginger soup is a snap to make. Many people believe that beets cleanse the liver and that ginger wards off colds, but even if you give no credence to such beliefs, it doesn't matter: this soup is just plain good to eat. I like to make things easy for myself and do no more than blend drained canned beets with additive- and sodium-free broth and grated fresh ginger. The soup can be wonderful at room temperature, or, if you like your soup piping hot, you can heat everything in a pan. But I never do. I just blend and drink. This must be the quickest route to a restoring bowl or mug of something on record.

BRAISED RED CABBAGE WITH BEET

Braised Red Cabbage With Beet image

I love braised red cabbage and luckily there are lots of recipes for braised red cabbage dishes. However there's always room for one more recipe and the addition of beet (beetroot) makes for an unusual and tasty variation. Traditionally we always have a braised red cabbage side dish for Christmas lunch, last year I served this for a change (but omitted the cloves). The recipe comes from "Leith's Vegetarian Bible".

Provided by Mrs B

Categories     Vegetable

Time 1h45m

Yield 4-6 serving(s)

Number Of Ingredients 9

12 ounces red cabbage
1 tablespoon olive oil
1 red onion, finely diced
8 ounces raw beets, peeled and diced
2 teaspoons soft light brown sugar
1 pinch ground cloves, to taste
1 tablespoon raspberry vinegar
1/2 orange, juice of
salt & freshly ground black pepper, to taste

Steps:

  • Cut the cabbage into quarters, remove the hard core and shred.
  • Heat the oil in a large heavy saucepan, add the onion and fry over a low heat until it begins to soften; add the cabbage, beetroot and all remaining ingredients, seasoning to taste.
  • Cover the pan tightly and keeping an eye on the liquid (there should be enough at all times to prevent sticking, but no excess at the end of cooking) cook, stirring occasionally, for 1 ½ - 2 hours, until soft and reduced in bulk; adjust seasoning if required.
  • NOTE: This can also be made in advance and reheated; it can also be cooked in a casserole dish in a low oven.

  • If you don't have fresh ginger, you can use 1/2 teaspoon of ground ginger.
  • If you like a spicy soup, add a pinch of cayenne pepper or red pepper flakes.
  • For a creamier soup, add 1/2 cup of coconut milk or heavy cream.
  • Serve the soup with a side of crusty bread or crackers.

Conclusion:

This beet, ginger, and red cabbage soup is a delicious and healthy way to warm up on a cold day. It's packed with nutrients and antioxidants, and it's also low in calories and fat.
