Berry-Oatmeal Bake image

This breakfast bake is easy on the calories and fat and as pretty as a picture. With its berries and oat-almond topping, it's almost like a tart, sweet fruit cobbler-great with a little Greek yogurt or milk on top.

Provided by Food Network Kitchen

Time 1h10m

Yield Serves 6

Number Of Ingredients 17

2 teaspoons unsalted butter
1 1/4 cups old-fashioned rolled oats
3 tablespoons light brown sugar
Kosher salt
1 2/3 cups plain unsweetened almond milk
1 large egg
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
1/3 cup skin-on sliced almonds
1/3 cup old-fashioned rolled oats
1/3 cup light brown sugar
2 tablespoons unsalted butter, melted
1 tablespoon whole-wheat pastry flour or unbleached all-purpose flour
1/8 teaspoon ground cinnamon
Kosher salt
12 ounces frozen mixed berries, thawed (2 1/2 cups frozen; 1 1/2 cups thawed)
Two-percent Greek yogurt or low-fat milk, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish or 8-inch square baking pan with the butter.
  • For the oatmeal: Stir together the oats, sugar and 1/8 teaspoon salt in a large bowl. Whisk together the almond milk, egg, vanilla and almond extract in a medium bowl. Pour the milk mixture into the oat mixture and stir well to combine.
  • For the topping: Stir together the almonds, oats, sugar, butter, flour, cinnamon and 1/8 teaspoon salt in a medium bowl until evenly combined.
  • To assemble: Pour the oatmeal into the prepared baking dish. Arrange the berries (including any juices) over the oatmeal. Sprinkle with the topping. Bake until lightly browned and just set, about 50 minutes. Let cool on a rack for 10 to 15 minutes. Serve warm with a dollop of yogurt or a splash of milk if using.

CRUNCHY BERRY ALMOND CRUMBLE

Crunchy Berry Almond Crumble image

The paradox of a fruit crisp is that it's usually not crisp, nor is a fruit crumble necessarily crumbly. Here, however, the crumbs are as crisp as cookies, offering a textural contrast to the puddinglike berries. This delicious treat is at once crispy, crumbly and profoundly fruity.

BAKED OATMEAL WITH BERRIES AND ALMONDS

Baked Oatmeal With Berries and Almonds image

A fruit-filled take on an Amish recipe, this homey baked oatmeal is crunchy from chopped almonds but still soft and comforting from the buttery egg custard that suffuses the oats. You can use any fruit here instead of - or in combination with - the berries. Cubed apples or pears, bananas, pineapple or even mango will add a sweet juiciness to the mix. And for something even richer, serve this doused in heavy cream.

BLUEBERRY CRISP WITH OATMEAL AND ALMOND TOPPING

Blueberry Crisp with Oatmeal and Almond Topping image

Categories     Dessert     Bake     Blueberry     Almond     Oat     Summer     Healthy     Bon Appétit     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes 6 servings

Number Of Ingredients 9

3 1/2-pint baskets fresh blueberries
2 tablespoons plus 1/4 cup (packed) golden brown sugar
1/2 teaspoon ground cinnamon
1/2 cup quick-cooking oats
2 tablespoons all purpose flour
1/4 teaspoon salt
2 tablespoons (1/4 stick) chilled unsalted butter, cut into small pieces
1/4 cup sliced almonds
Nonfat vanilla frozen yogurt

Steps:

  • Preheat oven to 350°F. Rinse blueberries. Drain, allowing some water to cling to berries. Place berries in 9-inch-diameter glass pie dish. Sprinkle with 2 tablespoons brown sugar and cinnamon; stir to blend. Let stand until sugar dissolves and coats berries. Stir oats, flour, salt, and remaining 1/4 cup brown sugar to blend in medium bowl. Add butter and rub in with fingertips or fork until moist clumps form. Stir in almonds. Sprinkle oat mixture evenly over blueberries. Bake crisp until berries are bubbling and topping is golden, about 35 minutes. Serve warm, each serving topped with a spoonful of frozen yogurt.

Tips:

  • Use fresh berries: Fresh berries will give your oatmeal the best flavor and texture. If you don't have fresh berries on hand, you can use frozen berries, but be sure to thaw them before using.
  • Don't overcook the oatmeal: Oatmeal is best when it's cooked just until it's tender. If you overcook it, it will become mushy.
  • Add your favorite toppings: Oatmeal is a great base for all sorts of toppings. Try adding nuts, seeds, dried fruit, or a drizzle of honey or maple syrup.
  • Make it ahead of time: Oatmeal is a great meal to make ahead of time. You can cook it the night before and reheat it in the morning, or you can even freeze it for later.

Conclusion:

Berry almond crumble oatmeal is a delicious and nutritious way to start your day. It's easy to make and can be customized to your liking. With its combination of sweet berries, crunchy almonds, and hearty oats, this oatmeal is sure to become a breakfast favorite.
