MOM'S CHRISTMAS FUDGE
This has been a Christmas staple in our house since the early 1980s. It's ridiculously easy and pretty yummy. (I use the plastic bag over my hand trick to smooth out the fudge.)

CHRISTMAS FUDGE
This recipe has been in our family for many years. This fudge is not sugary-sweet. It has a rich, chocolate, creamy taste that melts in your mouth. This is also good to make for that very special someone for Valentines Day.

Steps:
- Slowly melt chocolate in a double boiler; simmer over low heat.
- When the chocolate has completely melted, whip the whipping cream on the highest speed of your hand-held mixer, (for about 3 minutes) or until it has thickened.
- Stir the whipped cream into the melted chocolate, until it has completely dissolved (continuously stirring for about 3 minutes). The fudge will become dark in color and glossy.
- Stir in the chopped walnuts, then pour into a buttered 13x9x2-inch pan.
- Refrigerate until slightly firm.
- With a buttered knife, cut into 48 square pieces.
- Refrigerate again, until fudge has firmed up completely.
- *Note: Ambrosia Real Milk Chocolate is a good quality brand of chocolate that I use to make this fudge.
- One other thing I wanted to mention. When I made this fudge, I stated to use a double boiler, but years ago I didn't own one, so I used an oversized waterless cookware pot (to heat/simmer the water in). I melted the chocolate in a large size aluminum bowl, which I placed that over the large pot of simmering 'hot' water. Also, you can place this fudge in the freezer, as it does freeze well.

Tips:
- Use fresh or frozen berries for the best flavor. If using frozen berries, thaw them completely before using.
- If you don't have a candy thermometer, you can test the fudge by dropping a small amount into a glass of cold water. If the fudge forms a soft ball, it is ready.
- To make the fudge even more festive, add some chopped nuts, sprinkles, or crushed candy canes.
- Fudge can be stored in an airtight container at room temperature for up to 2 weeks.
Conclusion:
Berry Christmas Fudge is a delicious and easy-to-make treat that is perfect for the holiday season. With its creamy texture, sweet flavor, and festive appearance, this fudge is sure to be a hit with everyone who tries it. So, gather your ingredients and get ready to make some holiday cheer!
