Yield 9 serving(s)

Number Of Ingredients 13

1 cup all-purpose flour
1 cup brown sugar, packed
3/4 cup old fashioned oats
1/2 cup butter, melted
1 1/2 teaspoons vanilla extract, divided
1 teaspoon ground cinnamon
1 1/2 cups rhubarb, diced, fresh, frozen
1 1/2 cups strawberries, sliced fresh
1 1/2 cups fresh blackberries
1/2 cup sugar
1 tablespoon cornstarch
1/2 cup water
vanilla ice cream

Steps:

  • In a small bowl, combine the flour, brown sugar, oats, butter, 1 teaspoon vanilla and cinnamon. Set aside 1 cup for topping; press remaining crumb mixture into a greased 8-in. square baking dish. Top with rhubarb, strawberries and blackberries.
  • In a small saucepan, combine sugar and cornstarch. Stir in water. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in remaining vanilla. Pour over fruit; sprinkle with remaining crumb mixture.
  • Bake at 350° for 25-30 minutes or until bubbly. Serve with ice cream.

Tips:

  • Choose the best rhubarb: Look for bright red stalks that are firm and crisp, with minimal blemishes. Avoid stalks that are wilted or have brown spots.
  • Prepare the rhubarb properly: Wash the rhubarb stalks thoroughly and trim off the ends. Cut the stalks into 1-inch pieces.
  • Use a variety of berries: This recipe is a great way to use up any leftover berries you have on hand. Feel free to mix and match different types of berries, such as strawberries, raspberries, blueberries, or blackberries.
  • Sweeten to your taste: The amount of sugar you add to the crisp will depend on the sweetness of the berries and rhubarb. Start with 1/2 cup of sugar and add more to taste.
  • Don't overcook the crisp: The crisp is done when the topping is golden brown and the filling is bubbling. Overcooking will result in a dry and tough crisp.

Conclusion:

Rhubarb crisp is a delicious and easy-to-make dessert that is perfect for any occasion. With its combination of tart rhubarb, sweet berries, and crunchy oat topping, this crisp is sure to be a hit. Serve it warm with a scoop of vanilla ice cream or whipped cream for an extra special treat. Enjoy!
