OVERNIGHT BERRY COFFEE CAKE

Overnight Berry Coffee Cake image

After enjoying a berry coffee cake at a bed-and-breakfast we visited on our honeymoon, I went home and tried to duplicate it. My husband said I was successful!

Provided by Taste of Home

Time 1h

Yield 12-16 servings.

Number Of Ingredients 15

2 cups all-purpose flour
1 cup sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup buttermilk
2/3 cup butter or margarine, melted
2 large eggs, beaten
1 cup fresh or frozen raspberries or blueberries
TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped nuts
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine flours, sugars, baking powder, baking soda, cinnamon and salt. In a separate bowl, combine buttermilk, butter and eggs; add to dry ingredients and mix until well blended. Fold in berries. Pour into a greased 13-in. x 9-in. baking pan. Combine topping ingredients; sprinkle over batter. Cover and refrigerate several hours or overnight. Uncover and bake at 350° for 45-50 minutes or until cake tests done.

Nutrition Facts :

Tips:

  • For a moist and tender coffee cake, use a combination of all-purpose flour and cake flour. Cake flour has a lower protein content than all-purpose flour, which results in a softer crumb.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, resulting in a light and airy coffee cake.
  • Don't overmix the batter. Overmixing can develop the gluten in the flour, resulting in a tough coffee cake.
  • For a streusel topping, combine flour, sugar, butter, and spices in a bowl and mix until crumbly. Sprinkle the streusel topping over the batter before baking.
  • Bake the coffee cake until a toothpick inserted into the center comes out clean. The baking time will vary depending on the size of the pan you are using.
  • Let the coffee cake cool for a few minutes before inverting it onto a wire rack. This will help to prevent the cake from breaking.

Conclusion:

Berry-topped coffee cake is a classic breakfast or brunch treat that is easy to make and always a crowd-pleaser. With its moist and tender crumb, sweet and tangy berry topping, and crunchy streusel topping, this coffee cake is sure to be a hit at your next gathering. So next time you're looking for a delicious and easy recipe, give berry-topped coffee cake a try. You won't be disappointed!
