2 tablespoons sugar
1 teaspoon salt
1-1/4 cups cold unsalted butter, cubed
1/3 cup cold water
FILLING:
4 tablespoons unsalted butter
5 pounds medium Honeycrisp apples, peeled and sliced 1/4-in. thick
1/2 cup sugar
1/4 cup packed dark brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon grated lemon zest
1/2 cup apple cider
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 large egg yolk
1 tablespoon heavy whipping cream
Coarse sugar

Steps:

  • For the crust, pulse flour, sugar and salt in a food processor until blended. Add butter; pulse until butter is the size of peas. While processing, add just enough ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or overnight., For the filling, melt butter in a Dutch oven over medium heat. Add apples and next 6 ingredients; stir to combine. Cook, covered, stirring occasionally, until apples have softened and released their juices, 10-12 minutes. With a slotted spoon, transfer apple slices to a 15x10-in. baking pan; spread into a single layer. Add cider to remaining liquid in Dutch oven and bring to a boil; cook until juices reduce to 1/2 cup, 10-12 minutes. Remove from heat; add lemon juice and vanilla extract. Pour over apple slices; cool completely. (Filling can be made 24 hours in advance and refrigerated.), Preheat oven to 425°. Adjust oven rack to lowest position; place foil on rack to catch any spills. On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a deep dish 9-in. pie plate. Trim pastry to within 1/2-in. of rim. Add filling. Roll remaining dough to a 1/8-in.-thick circle; place over filling. Trim, seal and flute edge. Cut slits in top. Whisk together egg yolk and cream; brush top of pie. Sprinkle with coarse sugar. Chill 15 minutes., Bake 20 minutes. Reduce oven setting to 350°. Bake until crust is golden brown and filling bubbly, 40-50 minutes longer. Cool on a wire rack.

4 cups apples, chopped (tart apples)
1 1/2 tablespoons lemon juice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
4 cups sugar
1 cup brown sugar, packed
1 (1 3/4 ounce) box dry pectin
1 teaspoon butter

Steps:

  • Measure apples in a measuring cup, now add in the same measuring cup water to fill up to the 4 cup line (with the apples in it).
  • Add pectin and the butter and spices, lemon juice.
  • Bring to a boil.
  • Add sugars and bring back to a full rolling boil, boil 1 minute.
  • Stir constantly.
  • Remove from the heat.
  • Skim off any foam.
  • Ladle into hot jars leaving 1/4-inch headspace.
  • Put on lids.
  • Process in water bath 10 minutes.

1 cup white sugar, divided
2 tablespoons all-purpose flour
6 cups thinly sliced peeled apples
2 cups water
3 -4 tablespoons lemon juice, bottled is fine
1 pie crust
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground mace
1/2 cup butter, softened

Steps:

  • Preheat the oven to 375.
  • In a large bowl, (at least 8 cups) combine 2 cups water and the lemon juice, as you cut up the apples put them in the water. This will keep them from browning. When you are finished cutting them up, drain off all the water.
  • Combine 1/2 cup of the sugar, and the 2 tablespoons of flour. add to the apples.
  • Grease a pie tin. Line it with the pie crust. Fill with the apple/flour mixture.
  • In separate bowl combine remaining 1/2 cup sugar, the 1/2 cup flour, cinnamon, ginger, and mace. Cut in butter until crumbly. Pat onto the top of the apples. Cover the edge of the pie with foil.
  • Bake for 30 minute then remove foil. Bake 30 minute more or until topping is golden.

1 1/2 cups (3 sticks) chilled unsalted butter, cut into pieces
2 tablespoons apple cider vinegar
Filling and assembly:
4 pounds Pink Lady apples, peeled, cored, thinly sliced
1/3 cup (packed) dark brown sugar
1/4 cup granulated sugar
2 tablespoons fresh lemon juice
2 teaspoons ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom
All-purpose flour (for surface)

1 vanilla bean, split lengthwise
2 tablespoons cornstarch

  • Pulse flour, sugar, and salt in food processor to combine. Add butter and process until largest pieces of butter are pea-size. Transfer to a large bowl.
  • Combine vinegar and 1/2 cup ice water in a small bowl and drizzle over flour mixture, mixing with a fork to combine. Mix until shaggy pieces form, then knead in bowl a couple of times with your hands to bring together into a shaggy dough (it will look quite dry). Repeat with remaining dough. Chill at least 2 hours.
  • Toss apples with brown sugar, granulated sugar, lemon juice, cinnamon, salt, allspice, and cardamom in a large bowl to coat. Let apples sit until they start to release their juices, at least 1 hour and up to 3 hours.
  • Let dough sit at room temperature 5 minutes to soften. Working one at a time, roll out disks of dough on a lightly floured surface 1/8" thick. Place each on a parchment-lined baking sheet and chill while you prepare the filling.
  • Preheat oven to 375°F. Place apple cider in a medium saucepan and scrape in seeds from vanilla bean; add pod. Bring to a boil and cook, whisking occasionally, until reduced by two-thirds. Pour off juices that have accumulated in bowl of apples and add to apple cider. Return to a boil and cook until reduced to about 1/2 cup; remove vanilla pod. Stir cornstarch into 3 Tbsp. water in a small bowl to dissolve, then whisk into apple cider. Cook, whisking constantly, until cider mixture is very thick and bubbling, about 1 minute. Let cool slightly, then scrape over apples; toss to coat.
  • Carefully transfer dough round to pie dish. Lift up edges and allow dough to slump down into dish (if too cold to be pliable, let it warm up slightly first). Trim, leaving about 1" overhang. Beat egg with 1 tsp. water in a small bowl and brush over edges of dough. Scrape in apple filling, creating a mound in the center; dot filling with butter. Place remaining dough round over filling. Trim edges of top round, leaving a 1/2" overhang. Fold edge of bottom round up and over; press together to seal. Crimp edge and brush top with remaining egg wash. Sprinkle with demerara sugar and cut a few vents in top. Place pie on a foil-lined rimmed baking sheet and chill in freezer 10 minutes.
  • Bake pie until crust is deep golden brown and juices are thick and bubbling, 1 1/2-2 hours (yes: 2 hours!). Transfer pie to a wire rack and let cool at least 4 hours before serving.

  • Dough can be made 5 days ahead. Keep chilled, or freeze up to 1 month. Pie can be made 1 day ahead. Let cool; store covered with foil at room temperature.

12 granny smith apples, peeled and sliced - thin
4 Tbsp lemon juice
2 Tbsp cinnamon
2/3 c flour
1/2 c brown sugar
1/2 c sugar
1/4 c butter, cut into pats
1 Tbsp cream for top of pie

Steps:

  • 1. Preheat oven to 400 degree F. Peel and slice apples to about 1/4 inch slices. Toss with 3 tablespoons lemon juice; to keep from browning. Prepare crusts and line a 9 inch deep dish pie plate with one of the crusts.
  • 2. In a large bowl; mix flour, sugar, spices. Add the sliced apples and toss well. Add the remaining tablespoon of lemon juice as well. Let set for a good 20 minutes.
  • 3. Carefully place apples into pie crust, making sure they are placed as evenly as possible. Place the butter pats randomly over the apples. Place the top pie crust over apples. 2 sticks , unsalted butter. (Placed In the freezer for an hour)
2 tablespoons sugar
1/2 teaspoon salt
5 -7 tablespoons ice water
5 granny smith apples
1 gala apples
1/3 cup sugar
1/4 cup brown sugar
3/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon clove (optional)
3 tablespoons applesauce
1 tablespoon lemon juice (Bottled is fine)

Steps:

  • First Make The Crust.
  • Start off by mixing 2 1/2 Cups of AP Flour, with 2 Tablespoons of Sugar, and 1/2 Teaspoon of Salt.
  • Then, using a Food Processor, or a Pastry Blender, (or even 2 knives). Add 2 Sticks of cubed COLD Butter (The cold butter is used for flakiness).
  • Combine until mixture looks like Course Crumbs.
  • Add Ice Cold Water, 1 Tablespoon at a time. Until when squeezed between your hands it forms into dough.
  • Form Dough into 2 Balls. Wrap separately in plastic wrap, and Refridgerate for One Hour.
  • While Dough is Refridgerating, Peel, Core and Thinly Slice Apples, and place in bowl. Add Lemon Juice.
  • Add all the sugar, spices, and applesauce, and mix well.
  • Cover with Plastic Wrap, and Refrigerate until the Pie Crust is done.
  • Take Both out of the Fridge, and let sit on counter for 5-10 minutes.
  • Roll One Ball of Dough Out. (Roll at least two inches bigger than your pie dish is.).
  • Place in a buttered, and floured pie dish.
  • Add Apples, but reserve the liquid at the bottom. Pour a Tablespoon of the Liquid on top of the apples. And Discard the rest of the liquid.
  • Design Top Crust However You Want. (Lattuce Top or Top Crust, with an X on top, to vent.).
  • Sprinkle 1 Tablespoon of Sugar on top.
  • Put Pie in a Preheated 425 Degree Oven for 15 Minutes.
  • Reduce the Heat to 350 Degrees and Bake for 42-48 minutes.
  • Take Out of Oven and Let Cool For 15 Minutes.

4 medium granny smith apples
3 medium jonathan apples
1 medium macintosh apple
3/4 c sugar
2 tsp pumpkin pie spice
2 Tbsp cornstarch
2 Tbsp lemon juice
2 Tbsp butter, sliced into thin pats

Steps:

  • 1. Prepare a double crust for a deep dish 9" pie plate.
  • 2. Peel, core, and slice the apples. You'll want about 9 cups of prepared fruit. Place the apple slices in an extra large mixing bowl.
  • 3. Sprinkle the lemon juice over the apple slices, and toss to coat. Set aside.
  • 4. In a small mixing bowl combine the sugar, spice, and cornstarch. Stir the sugar mixture into the apples until the slices are well coated. (A wooden spoon works great for this.)
  • 5. Mound the coated apple slices into the crust in the pie plate, slightly higher in the middle.
  • 6. Dot the top of the apple slices with the pats of butter.
  • 7. Lay the top crust over the filling, and gently crimp the edges to seal. Make a few shallow cuts in the top crust, in any pattern you like, to allow steam to escape.
  • 8. Bake at 425* for about 50 minutes. The pie is done when the crust is golden brown, and the juices are bubbling out through the slits in the crust.
  • 9. NOTES: I like to sprinkle the top of the crust with cinnamon-sugar before baking. If the crust is getting too dark too soon, reduce the heat to 350* for the remaining time. You may need a few extra minutes of baking time. You may use any combination of apples you like, or simply use all tart apples -- whatever you prefer. If I'm in a hurry, I don't bother to peel the apples! A corer-slicer tool is very helpful, and makes short work of the prep. Whole wheat crust is very good with this pie -- we actually liked it better than regular crust. This recipe is easily made gluten free by using a GF pie crust. (I recommend Pillsbury GF pie dough!)

  • 2. Start by making a pie crust. Mix flour and salt in a bowl. With a pastry blender cut in lard. NOTE: I home render my lard for pie crusts. It is a creamy white lard unlike the lard purchased in the grocery stores. If you can get home rendered lard from someone it makes the best pie crust.
  • 3. You want to cut in the lard until course and pea size. Add 3-4 tablespoons cold water and bring together dough with fork. Add water 1 tablespoon at a time until dough holds together.
  • 4. NOTE: Now here is the trick. Make sure that you have cut the lard into the flour enough and you want it to hold together slightly forming peas. Do not beat, mix or squash. CUT into and I usually work my way around the sides of the bowl when I cut. I will take a fork and gently go through this to see how it looks and feels. Then I add my water. Again gently bring dough together.
  • 5. Now, on a flour board dump the dough on the floured board and with hands gently from the outside move dough together so it holds.
  • 6. Now I take a knife and cut my dough right in half. Cover the dough with plastic wrap so it does not dry out.
  • 7. On a floured board, cloth or Roll'Pat (I purchased this at a specialty baking store. It is silicone and wonderful.) Sprinkle with flour. Pat the ball of the dough flat gently. Add more flour underneath. Flour the top. Now roll gently away from you, not back and forth. You will tear the dough! Flour the top and gently lift and add more flour underneath. Roll out to about a 10-11 inch circle to place in a 9 inch pie plate.
  • 8. Place in pie plate and gently (do not stretch dough). Pat around into place. The should hang over about 1/2 inch to 3/4 inch.
  • 9. You have peeled your apples. Arrange apples in pie plate. Mix 1 cup sugar, 1 teaspoon cinnamon and 1 tablespoon cornstarch together. Pour on top of apples evenly. Sprinkle the 1 tsp. cinnamon on top. Cut the butter in small pieces and put dabs all over the top.
  • 10. Roll out second pie crust same as before. Cut a design on top or use small cookie/pie cutters to cut out three small shapes for steam to escape.
  • 11. Gently place crust on top of apples. This should be trimmed around the edges to fit the size of the pie plate. You want to be able to fold the bottom pie crust over the top pie crust on the edges. Pinch together or flute sides as you normally would or use a fork. I use my fingers and flute it!
  • 12. Place pie in preheated 425 degree oven for 15 minutes, then turn it down to 350. Bake an additional 45 minutes.
  • 13. Place foil or a pan to catch dripping if the pie should bake over.
  • 14. ***NOTE*** You can use your food processor to mix the pie dough. I add my flour, salt and lard in chucks. I pulse to food processor until I get pea formation. Then I dump this into a bowl and add my water.

  • Use Fresh Lemon Juice: Lemon juice helps prevent the apples from browning.
  • Make a Thicker Filling: Use a mixture of cornstarch and flour to thicken the filling, ensuring it doesn't become too runny.
  • Lattice Crust Design: For a classic and aesthetic touch, use a lattice crust design on top of the pie.
  • Chill the Dough: Always chill the dough before rolling it out. This prevents it from becoming too sticky and difficult to work with.
  • Brush with Egg Wash: Before baking, brush the top crust with egg wash (a mixture of egg and water) to give it a golden brown color.
  • Use Pie Weights: To prevent the crust from bubbling up, place pie weights or dried beans on top of the unbaked pie.
  • Bake at the Right Temperature: Start by baking the pie at a high temperature, then reduce it to finish baking, ensuring a perfectly cooked crust and filling.
  • Let It Cool: Allow the pie to cool completely before serving. This helps the filling to set and prevents it from becoming runny.
