Steps:

  • Preheat oven to 350 degrees.

1 1/2 teaspoons fine salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/2 sticks unsalted butter, softened
1 3/4 cups packed dark brown sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract or vanilla bean paste
One 12-ounce bag semisweet chocolate chips (about 2 cups)

Steps:

  • Sift the flour, salt, baking powder and baking soda into a large bowl.
  • Beat the butter and brown sugar in a large bowl with an electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. (Use the paddle attachment for a stand mixer.) Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the dry ingredients and beat until combined. Stir in the chocolate chips by hand.
  • Press plastic wrap directly onto the surface of the dough and refrigerate at least 1 hour or preferably overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Use a 1-ounce ice cream scoop to scoop half the dough onto the prepared baking sheets, spacing about 2 inches apart. Chill the remaining dough while you bake the first batch.

2 1/4 teaspoons kosher salt
1 teaspoon baking soda
1 stick (8 tablespoons) unsalted butter, softened
1/4 cup vegetable oil
3/4 cup granulated sugar
1/2 cup packed dark brown sugar
1 tablespoon pure vanilla extract
2 large eggs, at room temperature
One 12-ounce bag semisweet chocolate chips

Steps:

  • Arrange racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, salt and baking soda in a medium bowl until completely combined. Beat the butter, oil, granulated sugar and brown sugar in the bowl of a stand mixer with the paddle attachment (or a large bowl if using a hand mixer) on medium-high speed until creamy, about 5 minutes. These are THE best cookies ever made! They are soft and chewy, and filled with melt in your mouth choc chips. The ground oats give them a subtle oatmeal flavour and delicious texture. I invented the recipe trying to duplicate Mrs Field's cookie and these cookies are definitely as good.. dare i say BETTER, than Mrs Fields. Watch them disappear in seconds!!

125 g butter
3/4 cup brown sugar
1/4 cup caster sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup all-purpose flour
1 1/4 cups rolled oats
100 g milk chocolate chips
100 g white chocolate chips

Steps:

  • Pre-heat the oven to 160°C Place the oats in a food processor and process into a powder. Place into a medium bowl and stir in the sifted flour, baking soda, baking powder and salt.
  • Beat the butter and the sugars together in a large mixing bowl with an electric mixer, then add the egg and beat. Stir in the vanilla.
  • Gently stir the flour mixture into the sugar mixture and then fold in the chocolate chips (you should have a soft sticky mixture not a dough).
  • Scoop golf ball sized portions of the cookie mix spaced 2 inches apart onto lined baking trays. Bake for 9-12 minutes, no more (cookies will continue to cook when taken out of oven). Let cool on trays for 7 minutes and then place on racks to cool completely.

3/4 cup whole wheat flour, plus
2 tablespoons whole wheat flour
2 tablespoons cornstarch
1 1/4 cups unbleached all-purpose flour
1/4 cup cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup dark chocolate chips (semi-sweet are usually vegan, check ingredients) or 1/2 cup semi-sweet chocolate chips (semi-sweet are usually vegan, check ingredients)
3/4 cup double brewed millstone chocolate velvet coffee
1/2 cup sugar
1/3 cup unsweetened applesauce
3 tablespoons oil
3/4 cup soymilk
2 teaspoons vinegar
1 teaspoon vanilla
1/4 cup soymilk (additional)

Steps:

  • Preheat oven to 350 degrees F.
  • Oil 6 large or 12 small muffin cups.
  • Mix flours, cornstarch, cocoa, baking powder, salt, baking soda and dark chocolate chips together in a large bowl.
  • Place coffee, sugar, applesauce, oil, soy milk, vinegar and vanilla in a blender and blend until smooth or place in a large bowl and blend with immersion blender.
  • Add wet ingredients to dry.
  • Stir, adding more soy milk to make it a thinner batter, you don't want it to be stiff.
  • Divide evenly among muffin cups, bake in oven for 20 minutes or until the toothpick test proves true.
  • Place on cooling rack, cover with a towel and remove after 5 minutes.
  • Cool completely.
  • Place in paper towel lined Tupperware, freeze after 1-2 days wrapped tightly in plastic.
  • Mark breaks these up and puts them in ice cream.

16 tablespoons light butter, such as Smart Balance or Land O'Lakes Light
1 egg
2 egg whites
1 1/4 teaspoons vanilla extract
1/3 cup sugar
1/2 cup brown sugar, packed
1 1/2 cups unbleached flour
1/2 cup ground oatmeal (measure after grounding the oats to a coarse flour consistency)
1 teaspoon baking soda
10 ounces semi-sweet chocolate chips, good quality (I plan to chop up dark Dove bars)
1/4 cup chopped walnuts (optional)
1/4 teaspoon salt, to bring out a bit more flavor

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream the butter and both sugars in a large bowl. Beat with electric mixer until smooth. Add the egg, egg whites, salt and the vanilla. Beat well.
  • In a smaller bowl, combine the dry ingredients (flour, ground oatmeal and baking soda). Slowly add the dry items into the larger bowl and beat with electric mixer until batter is smooth and creamy. Fold in entire bag of chocolate chips, and if you like add the walnuts.
  • Drop dough by large teaspoons (or scant Tablespoons) onto cookie sheet and bake for 11 minutes (the time REALLY depends on your oven so watch that first batch!).

This makes me want to give my kids hugs in the kitchen..I remember when my Grandma was showing me how to make these cookies..It was love for she had for everyone that inspired me to make this recipe for my kids..I feel so loved when they show me how much they appreciate me and my cooking or baking skills that were passed down to...

1 c (2 sticks) salted butter, softened
1/2 c sugar
1 1/2 c brown sugar
2 eggs
2 tsp vanilla extract
3 c (12 oz) all-purpose flour
1 tsp smallish-medium coarse sea salt
1 tsp baking soda
1 1/2 tsp baking powder
2 c /16 oz of semi-sweet chocolate chips (grandma used nestle, we used ghiradelli)
2/3 c finely chopped walnuts

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cream butter, sugar, and brown sugar until it is nice and fluffy (approx. 5 minutes on medium speed on a KitchenAid Mixer.) Make sure the mixture gets VERY creamy.
  • 3. Add the eggs and vanilla and beat for an additional 2 minutes. Add baking soda, baking powder, salt, and flour until cookie batter is fully incorporated. Finally add chocolate chips and the walnuts until well distributed. The cookie batter should be somewhat thick. Drop about 2 tablespoons of dough or use a medium cookie scoop and plop the batter onto a baking sheet lined with parchment paper.
  • 4. Bake for 12-14 minutes until the edges are nice and golden brown. We baked ours for 14 minutes, just watch them. Remove from heat and allow the cookies to stay on the cookie sheet for an additional 2 minutes. Pick up the parchment paper with the cookies still on top and transfer to a cool non-porous surface. Allow the cookies to cool on the paper for at least 3 minutes before serving. It was hard to wait 3 minutes, but we listened to Grandma's advice :) it was so hard to do...but well worth the wait...
