3 cups uncooked quick-cooking oats
2 cups firmly packed brown sugar
1 cup Land O Lakes® Butter softened
2 large Land O Lakes® Eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour

Steps:

  • Heat oven to 375°F.
  • Combine all ingredients except flour in bowl. Beat at low speed, scraping bowl often, until well mixed. Stir in flour until well mixed.
  • Drop dough by rounded tablespoonfuls, 2 inches apart, onto lightly greased cookie sheets. Bake 8-12 minutes or until edges are lightly browned. Let stand 1 minute; remove from cookie sheet.

I got this recipe years ago in a supermarket checkout cookbook called Fast Scratch Vegetarian--I think it MIGHT be from Land O' Lakes but my copy is fairly shredded so I can't be sure. At any rate, we have been making these for years, and though the recipe title is theirs I have to say I agree! I hope you do, too!

Number Of Ingredients 9

1 1/2 cups quick-cooking oats
3/4 cup brown sugar, packed
1/2 cup Smart Balance butter spread (sorry land o' lakes!)
1 egg
1/2 teaspoon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
3/4 cup whole wheat pastry flour (original calls for AP)
1/4 cup raisins (optional)

Steps:

  • Heat oven to 375.
  • In a large bowl combine all ingredients except flour. Beat at low speed until well mixed.
  • Stir in flour, then raisins. Drop by even tablespoons onto a greased cookie sheet.
  • Bake 8-10 minutes or until lightly browned.
