3/4 cup butter, softened
1 cup chocolate chips (Ghirardelli 60% cacao is the BEST)
3 cups confectioners' sugar
1/3 cup espresso (instant granules in cool water)
1 -2 teaspoon vanilla (optional)

Steps:

  • melt chocolate chips at 20 second intervals in your microwave, stirring each time until JUST melted.
  • cream together butter and melted chocolate until smooth.
  • add in the espresso and vanilla
  • gradually beat in the confectioner's sugar and continue beating until frosting is smooth and has lightened in color.

1/2 cup (115 grams) vegetable shortening
3 lbs (1.36 kilograms) 10X confectioners' sugar
1 cup (110 grams) Dutch processed cocoa powder
3 Tbsp meringue powder
1 tsp salt
5 fl oz (150 mililiter) chocolate liqueur (i.e., Godiva or another)
2 Tbsp milk
1 Tbsp pure vanilla extract
2 cups (1 pound or 454 gram) refrigerated Ganache

Steps:

  • 1. First, prepare the Ganache. Refrigerate until firm.
