When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.

1 onion (diced small (about 1/2 cup))
2 eggs
1/2 tsp. ground pepper
3/4 cup quick oats
1 Tbsp. Worcestershire sauce
1 tsp. garlic salt
1 tsp. onion salt
1/2 cup tomato sauce
1/4 cup ketchup
1/4 cup brown sugar
2 tsp. mustard

Steps:

  • Preheat oven to 350ºF. Spray a 9x5" loaf pan with cooking spray.
  • Mix together ground beef, onion, eggs, pepper, oats, Worcestershire sauce, garlic salt, onion salt and tomato sauce in a large bowl, using your hands. Do not overmix.

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt

1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown.   • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

1 lb pork sausage (bulk not links)
2 eggs
1 cup breadcrumbs
1 (10 1/2 ounce) can condensed cream of mushroom soup
1/4 cup ketchup
2 teaspoons Worcestershire sauce
1/2 cup ketchup
4 tablespoons brown sugar
4 teaspoons dry mustard

Steps:

  • Turn oven on and set at 350 degrees.
  • Mix the first 7 ingredients together thoroughly. Using your hands is the best way to get it done. Form meat into a loaf shape and place in a baking dish.
  • Place the meatloaf in the oven bake for 60 minutes.
  • While meatloaf is in the oven, mix the final 3 ingredients together.

3/4 cup breadcrumbs, plain
1 medium onion, chopped fine
1/2 cup ketchup
2 eggs
3 tablespoons onion soup mix (one packet)
1/2 cup ketchup
3 tablespoons brown sugar
2 teaspoons mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
  • Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
  • Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
  • Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
  • While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.

I don't remember where I found this recipe, on the internet somewhere maybe, but, basically, it's not mine. Definitely not low fat/low carb, but it's the best and easiest meatloaf I've ever had. I make it all the time for my family and they love it. My brother in law always requests that I make two, so he has leftovers the next day. You can substitute a ground meat mixture, or ground turkey for the ground beef.

1/2 cup ketchup
0.5 (1 ounce) package dry hidden valley ranch dressing mix
1 cup prepared stuffing, Pepperidge farm blue bag, NOT CUBED
1 (6 ounce) can French-fried onions
1 1/2 lbs ground beef (approx)
ketchup, for topping- see below

Steps:

  • Preheat oven to 400°F.
  • Put meat, french fried onions, and stuffing in bowl. Mix eggs, ketchup, and ranch dressing together separately (easier this way), then dump over other ingredients (meat, stuffing, onions). Mix all together. Shape into loaf (or whatever shape you want) and put on a cookie sheet. (Helps to line cookie sheet with tin foil first- easier clean up).
