THE BEST NATURAL PEACH JAM OR FILLING
This peach jam uses only real ingredients, no store-bought pectin. The apple provides natural pectin (especially the seeds and peel) and gives the jam a nice, firm consistency. The color is beautiful, too. Feel free to exchange the peaches with other stone fruits or berries. This makes great gifts, too. Of course, the best jam is made from Texas peaches, but I'm sure any sweet, fresh peaches will be just dandy.

Steps:
- Heat four 8-ounce jars in simmering water until ready for use. Wash lids and rings in warm soapy water.
- Combine peaches, sugar, apple, lemon juice, and water in a large pot over high heat. Bring to a boil, stirring constantly. Cook until peaches soften and mixture thickens, about 20 minutes. Mash peaches with a potato masher. Continue cooking until a small amount of jam dropped on a plate stays in place and doesn't run, 5 to 10 minutes more.
- Remove apple wedges and seeds with a slotted spoon.
- Pack jam into hot jars, filling to within 1/4 inch of the top. Wipe rims with a clean, damp cloth. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower in jars using a holder, placing them 2 inches apart. Pour in more boiling water to cover the jars by at least 1 inch. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 12 hours. Press the top of each lid with a finger, ensuring that lid does not move up or down and seal is tight.

GEORGIA'S BEST PEACH COBBLER
The Georgia peaches are coming in and yes I purchased a bag full of them to make this cobbler. This is the way my mother made her cobblers. Very simple but oh so delish! When I was a little girl, I remember us driving from Alabama over to Georgia to pick peaches. When we got home, mama would peel and slice them and freeze them...

Steps:
- 1. Slice peaches, removing any briused or dark spot and of course the pits. Place in a bowl; drizzle lemon juice over peaches. I do this to keep the peaches from becoming dark. Sprinkle 1/2 cup sugar over peaches; stir gently to combine. Refrigerate until juices begin flow, atleast an hour.
- 2. Preheat oven to 350 degrees. Melt butter in a 9 X 13-inch baking dish. This will take about 5 to 7 minutes.
- 3. Whisk together 3/4 cup sugar, 3/4 cup flour, salt and baking powder. Add milk and whisk until smooth.
- 4. Remove baking dish from oven and pour batter into hot dish over melted butter. Spoon peaches and juice from peaches onto top of the batter. Do not stir.
- 5. This step is optional and I don't recall my mother adding this to her cobblers but I love the taste of cinnamon and peaches together. Combine 1/2 tsp with 2 tsp of sugar; sprinkle over top of cobbler. Place in preheated oven and bake 45 to 50 minunutes until batter is cake like and top is a nice golden brown.
- 6. Remove from oven and serve with a nice scoop of vanilla ice cream while the cobbler is still hot. Enjoy!
- 7. NOTE: You can use other fruits in place of peaches if you desire.

Steps:
- 1. Preheat oven 350. Put stick of butter in 9 x 13 pan and stick in oven till melted. In medium size mixing bowl put sugar, flour, buttermilk, salt, and baking powder. Mix until all ingredients are wet and creamy. Pour into pan with butter. Spread if necessary. Don't mix. On top of that, spoon out peach pie filling evenly and sprinkle brown sugar and nuts on top. Don't mix. Place in oven for 45 to 55 minutes. Let cool 5 minutes and serve with ice cream.
Tips:
- Choose ripe peaches: Look for peaches that are fragrant and yield to gentle pressure. Avoid peaches that are hard or have bruises.
- Peel the peaches: To easily peel peaches, score a shallow X on the bottom of each peach. Place the peaches in boiling water for 30 seconds to 1 minute, or until the skin starts to loosen. Remove the peaches from the boiling water and immediately transfer them to an ice bath. The skin should now easily peel off.
- Remove the pit: To remove the pit from a peach, cut the peach in half around the pit. Twist the two halves in opposite directions to separate them. Use a spoon to scoop out the pit.
- Slice the peaches: Slice the peaches into thin wedges or slices. You can also dice the peaches if desired.
- Add sugar to taste: Peaches are naturally sweet, but you can add sugar to taste if desired. Start with a small amount of sugar and add more to taste.
- Use fresh herbs or spices: Fresh herbs and spices can enhance the flavor of peaches. Some popular choices include basil, mint, cinnamon, and nutmeg.
- Chill the peaches before serving: Chilling the peaches before serving will help to enhance their flavor and make them more refreshing.
Conclusion:
Peaches are a delicious and versatile fruit that can be used in a variety of recipes. They can be eaten fresh, cooked, or baked. Peaches are also a good source of vitamins and minerals, making them a healthy choice for snacks and desserts.
