Note to World Tour participants - this dish, the ingredients, and the cooking method, are typical for the Southwest U.S. region. If you add some hot peppers, it will also be typical for U.S./Mexico border cooking.

POTATO HASH

Provided by Anne Burrell

Time 30m

Yield 4 servings

Number Of Ingredients 8

5 cloves garlic, smashed
Kosher salt
4 Yukon gold potatoes, cut into a medium dice
Olive oil
1/2 Spanish onion, cut into a small dice
1 pinch crushed red pepper
Splash of chicken stock, as needed
1 bunch fresh chives, finely sliced

Steps:

  • Add 3 cloves of smashed garlic, a few large pinches of salt and potatoes to a large pot and cover with cold water. Bring to a boil over high heat and cook until potatoes are just tender, about 10 minutes. Drain potatoes and discard the garlic. Transfer the potatoes to a sheet tray lined with a clean dish towel to dry slightly.
  • Add enough oil to coat the bottom of a large skillet and heat over medium heat. Add the onion and cook, stirring, until just translucent, about 5 minutes. Add the crushed red pepper and the remaining 2 cloves garlic and cook, stirring, until soft and tender, about 3 minutes. Increase the heat to medium-high and add the cooked potatoes. Cook, stirring frequently, until the potatoes start to get crispy and golden brown on all sides, about 5 minutes. (If the potatoes get too dry, add the chicken stock.) Remove from the heat and stir in the chives.

Tips:

  • Choose the Right Potatoes: Select firm, starchy potatoes like Russet, Yukon Gold, or Red potatoes. These hold their shape well during cooking and create a crispy exterior.
  • Cut Potatoes Uniformly: Ensure the potatoes are cut into evenly sized cubes or slices. This promotes even cooking and prevents some pieces from becoming overcooked while others remain undercooked.
  • Season Generously: Don't be shy with the seasonings! A blend of salt, pepper, garlic powder, onion powder, paprika, and chili powder adds loads of flavor. You can also incorporate fresh herbs like thyme, rosemary, or chives for an extra layer of taste.
  • Use the Right Cooking Fat: Opt for high-heat cooking fats like butter, ghee, or bacon grease. These fats help create a golden-brown crust and prevent the potatoes from sticking to the pan.
  • Cook in Batches: To prevent overcrowding and ensure even cooking, cook the potatoes in batches. This allows each batch to get crispy without steaming.
  • Resist the Urge to Stir: Once you add the potatoes to the pan, let them sit undisturbed for a few minutes to develop a crispy crust. Resist the temptation to stir them constantly, as this will break the crust and hinder the browning process.
  • Flip Carefully: When it's time to flip the potatoes, use a spatula to gently loosen them from the pan before flipping. This helps prevent them from breaking apart.

Conclusion:

Potato hash is a versatile and delicious dish that can be enjoyed for breakfast, lunch, or dinner.
