2 ½ cups bleached all-purpose flour
¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

1 tablespoon shortening
2 tablespoons plus 2-1/2 cups all-purpose flour, divided
1 cup sugar
1 cup packed brown sugar
1 cup canola oil
1 cup buttermilk
3 eggs
1 tablespoon vanilla extract
1-1/2 teaspoons almond extract
1-1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking soda
1 cup chopped pecans
1 teaspoon confectioners' sugar

Steps:

  • Grease 10-in. fluted tube pan with shortening; lightly coat with 2 tablespoons flour. Set aside., In a large bowl, beat the sugars, oil, buttermilk, eggs and extracts until well blended. Combine the remaining flour, baking powder, salt, cinnamon, cloves and baking soda; gradually beat into the sugar mixture until blended. Stir in pecans., Transfer to prepared pan. Bake at 325° for 50-60 minutes or until a toothpick inserted in the center comes out clean., Cool for 10 minutes before removing from pans to wire racks to cool completely. My step dad ALWAYS made me a spice cake for my birthday, with a caramel over it. I can't eat enough of this to make me 13 again, but it helps with turning 30 too early.

1 cup sugar
2 eggs
1 (10 ounce) can tomato soup
1 cup raisins
1/2 cup walnuts (optional)
1 1/2 cups flour
1 teaspoon clove
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 pinch salt

Steps:

  • Mix all the ingredients together until completely blended. Bake at 350 f for 50 minutes, or until a fork in the middle is mostly clean.

This is the "icing" for the birthday spice cake from my childhood. It's the only reason I still admit to having a birthday. To get this cake/ icing combo out of my dad.

1 cup brown sugar
1/2 cup heavy cream
1/4 cup butter
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon rum flavoring (optional)
1 tablespoon butter

Steps:

  • Mix first four (4) ingredients and place on stove to boil. DO NOT STIR after it begins to boil.
  • Time for 4 minutes after the first bubbles break the surface. Immediately take it off the stove, and add the vanilla, butter and rum flavour (if using).
  • Pour it out onto a cooled spice cake. Allow to harden for as long as you can.
  • Eat it all before someone else does.
  • Call me if you can't finish it.
  • *Also note you can hit this with a smidge of cinnamon, or nutmeg or cloves if you like, but I find the rum flavour makes the best combo with the cake.
