BISQUICK PUDDING COOKIES

Bisquick Pudding Cookies image

Convenient food cookies. Instant pudding and Bisquick what could be easier? I've used butterscotch and chocolate pudding mixes with good results. When I do that I usually add 1 cup butterscotch chips or semi-sweet morsels.

Provided by mandabears

Categories     Dessert

Time 13m

Yield 8 cookies

Number Of Ingredients 5

1 (3 1/2 ounce) package instant vanilla pudding, i have also used butterscotch and chocolate with good results
1 cup Bisquick
1/4 cup vegetable oil
1 large egg
1 cup semisweet chocolate morsel (optional)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix Bisquick and pudding mix.
  • Stir in vegetable oil and egg with a wooden spoon until dough forms a ball.
  • Shape dough into 1/2-inch balls.
  • Place onto ungreased cookie sheets.
  • Flatten with bottom of a drinking glass.
  • Sprinkle with sugar, can use colored sugar for the holidays.
  • Bake for 5-8 minutes.

Tips:

  • Use a medium-sized saucepan to make the pudding. A large saucepan will make the pudding too thin, and a small saucepan will make it too thick.
  • Whisk the milk and Bisquick together until the mixture is smooth. If there are any lumps, the pudding will be lumpy.
  • Bring the mixture to a boil over medium heat, stirring constantly. Once the mixture boils, reduce the heat to low and simmer for 1 minute, or until the pudding has thickened. Do not overcook the pudding, or it will become rubbery.
  • Remove the pudding from the heat and stir in the chocolate chips. The chocolate chips will melt and make the pudding rich and chocolatey.
  • Pour the pudding into individual serving bowls or ramekins. Cover the bowls or ramekins with plastic wrap and refrigerate the pudding for at least 2 hours, or until it is chilled.
  • Serve the pudding cold, topped with whipped cream, ice cream, or fresh fruit.

Conclusion:

Bisquick chocolate pudding is a delicious and easy-to-make dessert that is perfect for any occasion. It is made with just a few simple ingredients and can be ready in under 30 minutes. The pudding is rich and chocolatey, with a smooth and creamy texture. It is a perfect dessert for chocolate lovers of all ages.
