1 1/2 c. zucchini, shredded
1/4 c. vegetable oil
2 tsp. cinnamon
1/2 c. nuts, chopped
3/4 c. sugar
3 eggs
1 tsp. vanilla
1 tsp. nutmeg

Steps:

  • Heat oven to 350 degrees. Grease bottom only of loaf pan. Beat all ingredients on low speed, scraping bowl constantly every 30 seconds. Beat on medium speed, scrape bowl occasionally.
