1 poblano pepper, roughly chopped

1 teaspoon fresh parsley
salt and pepper, to taste

Steps:

  • Preheat the oven to 325 degrees.
  • Spread beans on a lined baking sheet and bake for 15 minutes until slightly dried out. Reserve ½ cup black beans.

1 ¼ teaspoons kosher salt, divided, plus more to taste
1 cup cooked quinoa, cooled, divided
2 ½ teaspoons McCormick® chili powder, plus more to taste

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Arrange the sweet potato in a single layer on one third of the baking sheet. Drizzle with ½ tablespoon of olive oil and toss to coat.
