1 tablespoon olive oil
1 each medium sweet yellow, orange and red pepper, chopped
1 large onion, chopped
2 garlic cloves, minced
2 cans (15 ounces each) black beans, rinsed and drained
1 package (8.8 ounces) ready-to-serve brown rice
1-1/2 teaspoons ground cumin
1/2 teaspoon dried oregano
1-1/2 cups shredded Mexican cheese blend, divided
3 tablespoons minced fresh cilantro

Steps:

  • In a large skillet, heat oil over medium-high heat. Add peppers, onion and garlic; cook and stir 6-8 minutes or until tender. Add beans, rice, cumin and oregano; heat through., Stir in 1 cup cheese; sprinkle with remaining cheese. Remove from heat. Let stand, covered, 5 minutes or until cheese is melted. 2 medium ripe avocados, peeled and diced
2 tablespoons lime juice
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 medium sweet red pepper, chopped
6 green onions, chopped
2 tablespoons minced fresh cilantro
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Tortilla chips

Steps:

  • In a large bowl, combine avocados and lime juice; let stand for 10 minutes. In another large bowl, combine the corn, beans, red pepper, onions, cilantro and garlic. , In a small bowl, whisk the oil, vinegar, salt and pepper. Drizzle over corn mixture; toss to coat. 15 oz black beans, 1 can, drained and rinsed
½ cup jarred roasted red pepper, finely chopped
1 clove garlic, minced
¼ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon salt
¼ cup cornmeal

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a large bowl, microwave black beans for 1 minute, or until softened.
  • Add roasted red peppers, garlic, cayenne, cumin, and salt. Mash until black beans are finely mashed.
  • Add cornmeal and mix until thoroughly combined.
  • Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment paper-lined sheet pan.
  • Bake for 30 minutes, or until firm and browned, flipping over halfway through.

2 quart Plus 1/4 c. water
1 lrg Green bell pepper, minced fine, reserving about 1 tsp. forgarnish
1 sm Red onion, minced fine, reserving about 1 tsp. for garnish
3 Tbsp. Vegetable oil
1 1/2 tsp Grnd cumin, or possibly to taste
2 Tbsp. Cider vinegar, or possibly to taste Tortilla chips as an accompaniment Cherry peppers for garnish if you like

Steps:

  • In a large saucepan let the beans soak in cool water to cover for 1 hour, drain them, and in the pan combine them with 2 qts of the water. Bring the water to a boil and cook the beans at a slow boil for 1 hour, or possibly till they are tender. While the beans are cooking, in a large heavy skillet cook the bell pepper and the onion in the oil over moderate heat, stirring, till the vegetables are softened. Drain the beans, reserving 1/2 c. of them, add in the remaining beans to the bell pepper mix with the remaining 1/4 c. water, and simmer the mix, covered tightly, for 15 min, or possibly till the beans are very tender. In a food processor blend the mix with the vinegar and salt to taste, pulsing the motor till the mix is combined well but not pureed smooth. Transfer the dip to a bowl and stir in the reserved 1/2 c. beans. The dip may be made 2 days in advance and kept covered and chilled. 1 head garlic
1 tablespoon olive oil
Kosher salt and freshly ground pepper
One 16-ounce can cannellini beans, rinsed and drained
One 16-ounce can garbanzo beans (chickpeas), rinsed and drained
2 roasted red bell peppers from a jar or grilled, peeled and seeded
2 tablespoons ground cumin
1 tablespoons tahini
Juice of 1/2 lemon
2 teaspoons granulated garlic
2 teaspoons granulated onion
Pinch cayenne pepper (or more as desired)
1/4 cup chicken or vegetable stock
Fresh tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice off the top 1/3 of the garlic head with a serrated knife, exposing the cloves. Drizzle the oil over the cloves and with some salt. Tightly wrap the head in aluminum foil and transfer it to the oven. Roast until the garlic is very soft and deep golden brown, about 45 minutes. When cool enough to handle, remove 4 cloves for the dip and reserve the rest for another use.
