This is a typical dish served in Cuba or Puerto Rico, each country has their own method of preparation. You can flavor this dish with meat, but I left it out as I serve it as a side dish with my meats. It is an easy and healthy short cut and takes about 30 minutes to cook.

Steps:
- Put the rice in a saucepan with some salt and cover with about 5cm water. Bring to the boil and keep boiling until the water has disappeared and the surface of the rice looks 'pitted', as if there are little holes all over it. Immediately turn the heat down to the lowest setting and cover the pan with a lid. Leave to cook for 15 mins. By this time, the rice should be tender.
- In a large frying pan, heat 1 tbsp oil and cook the tomatoes over a medium heat for about 7 mins. Add the garlic, spring onions, chillies, oregano and cumin, season and cook for another 2 mins. Tip in the drained beans, stir them round and taste for seasoning.
- Add the rice to the pan with the tomatoes, beans and some seasoning. Heat through, then cover. Quickly heat 2 tbsp oil in a frying pan and fry the eggs. Season.
- Stir the coriander into the rice and bean mixture and squeeze over the lime juice. Serve the rice and beans with a fried egg on top alongside some pickled chillies, slices of avocado and a good dollop of soured cream, if you like.

Tips:
- Choose the right beans: Black beans are a classic choice for this dish, but you can also use other types of beans, such as kidney beans, pinto beans, or black-eyed peas.
- Soak the beans overnight: This will help to soften them and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then turning off the heat and letting them sit for 1 hour.
- Use fresh, flavorful ingredients: The quality of your ingredients will make a big difference in the final dish. Use fresh vegetables, herbs, and spices, and choose a good-quality rice.
- Don't overcook the rice: Rice should be cooked until it is tender but still has a slight bite to it. If you overcook the rice, it will become mushy and bland.
- Add the avocado at the end: Avocado is a delicate fruit, so it should be added to the dish just before serving. This will help to prevent it from browning.
Conclusion:
Black beans with rice and avocado is a delicious, healthy, and easy-to-make dish. It is a great option for a quick and easy weeknight meal, or for a potluck or party. With a few simple tips, you can make this dish even more flavorful and enjoyable. So next time you're looking for a tasty and satisfying meal, give black beans with rice and avocado a try!
