2 Tbs. plus 1 tsp. canola or olive oil
1 medium yellow onion, chopped
1 cup small-diced celery
2 large cloves garlic, finely chopped
4 oz. medium-coarse white bread, such as Italian or French, cut into 2-inch pieces (about 2-1/2 cups)
1 cup whole milk
2 lb. ground bison
2 large eggs
1/4 cup crumbled blue cheese
1 Tbs. Worcestershire sauce
Kosher Salt
Freshly ground black pepper
10 oz. sliced bacon (about 9 strips)

Steps:

  • Heat 2 Tbs. of the oil in a 10- to 12-inch skillet over medium-low heat. Cook the onion, celery, and garlic, stirring frequently, until softened and just beginning to brown, 6 to 8 minutes. Transfer to a large bowl and let cool until warm. In a shallow dish that holds it in a single layer, soak the bread in the milk, flipping once, until soggy but not falling apart, 5 to 10 minutes, depending on the coarseness and freshness of the bread. Lightly squeeze a handful of bread at a time to remove some of the milk (it should be wet but not drenched). Finely chop and add to the bowl with the onion-celery mixture. Position a rack in the center of the oven and heat the oven to 375°F. Add the bison and eggs to the onion-celery mixture. Scatter the blue cheese over the meat, and then sprinkle with the Worcestershire, 2-1/4 tsp. salt, and 1/2 tsp. pepper. Use your hands to gently mix all the ingredients until just combined; try not to compact the mixture as you do this. Heat the remaining 1 tsp. of oil in a small skillet over medium-low heat. Form 1 Tbs. of the meatloaf mixture into a small patty. When the oil is hot, cook the patty on both sides until cooked through, about 5 minutes total. Transfer to a plate and let cool slightly. Taste and adjust the salt, pepper, and other seasonings as needed. Repeat until you're satisfied with the flavor. Line a 9×13-inch baking pan with parchment. Transfer the meatloaf mixture to the baking pan and form into a 10×4-inch rectangular block (it becomes loaf-shaped as it cooks). Finish the meatloaf by draping it with slightly overlapping strips of bacon, tucking the ends under the loaf. Bake until an instant-read thermometer registers 160°F in the center of the meatloaf, 40 to 55 minutes. Broil the meatloaf about 6 inches from the broiler element until the bacon is brown and crisped, about 3 minutes. Let rest for 10 minutes. Transfer to a cutting board or serving platter with a large spatula and cut into 3/4- to 1-inch-thick slices.

I've been a huge fan of 2Bleu's 'Bleu Cheese Burgers' recipe for quite a long time now. However, with taste buds 'a roarin' I turned it into something else. After this there is absolutely no way I am going back to normal 'loaf.

1 lb ground beef
1/2 cup blue cheese (crumbled)
1/2 cup seasoned bread crumbs
1 egg
1/2 teaspoon black pepper
2 pieces bacon (Uncooked)
2 tablespoons blue cheese (crumbled)
garlic salt
black pepper
blackening seasoning

Steps:

  • Preheat Oven to 375°F.
  • Chop Uncooked Bacon to pieces no bigger than your small finger nails. If your nails are fake then use your neighbor's.
  • Mix in a bowl, by hand, Ground Beef, Bleu Cheese, Breading, Egg, Black Pepper, and Bacon. Make sure it is of even consistency.
  • Spray cooking spray on bottom of dish prior to use. Form loaf of preferred size and shape in baking dish. 1lb mixture fits nicely into a 6x9 dish.
  • Evenly spread additional Blue Cheese over the top of the loaf.
  • Season with Garlic Salt and Black Pepper to taste.
  • Go crazy with the Blackened Seasoning -- to taste -- of course.
  • Place in center of center rack for cook time of 55 minutes.

2 teaspoons cider or white vinegar
2 teaspoons vegetable oil
1 medium onion, chopped

1/2 teaspoon ground black paper
2 teaspoons Dijon mustard

Steps:

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. ⅔ cup ketchup
½ cup chopped onion

  • Preheat the oven to 350 degrees F (175 degrees C) .

sunflower oil , for greasing
85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

1 cup Italian seasoned bread crumbs
1 small onion, chopped
2 eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

Steps:

  • Preheat the oven to 350°
  • In a medium saute pan, heat the extra olive oil on med-high. Add garlic, onion, and carrot in oil and cook for 8-10 min or until soft.

  • After 30 minutes up, turn the oven temp to 450°. Cook for 10 minutes.
  • After 10 minutes, brush on ¾ of the glaze around the whole meatloaf.
  • Bake for 10 - 15 minutes more or until the internal temp is 160°.
  • Let the loaf rest for 10 minutes.
  • Slice, and brush the remaining glaze on top if desired.

How fun to serve. They are not hard and just something really different to serve to guests. The meatloafs come out golden brown with the bacon and juicy inside. I love to serve mine right on a large serving platter leaving a couple whole to see how pretty they look, and then slice the others in 3 or 4 slices per loaf to show off the filling. I like to think of it as a pretty standard meatloaf mix, then a filling of swiss cheese or gruyere (which I prefer), good baked ham (proscuitto is great, but any good ham will work), a honey mustard sauce, and topped off with more honey mustard and smoked or hickory bacon slices. Just baked individually on a baking sheet. All free formed. I like the rustic look Serve with Recipe #397749 and Recipe #391590. You could easily make these ahead of time and just refrigerate covered well and then bake the next day.

1 cup onion, very fine chopped
2 celery ribs, very fine chopped
2 tablespoons minced garlic
3 slices of fresh bread
1 cup milk
1/2 cup parmesan cheese, grated
2 eggs
1 teaspoon Worcestershire sauce
1 tablespoon steak sauce
2 tablespoons fresh parsley
1 teaspoon dried Italian seasoning

3/4 cup honey
3/4 cup Dijon mustard
4 slices baked ham
2 cups swiss cheese, grated
1 1/3 cups parmesan cheese, grated
8 slices bacon, cut in half (hickory or smoked I prefer)

Steps:

  • Mustard Sauce -- Simply mix the mustard and honey and set to the side.
  • Meatloaf -- In a large bowl, add the onion, celery, garlic, eggs, steak sauce, worcestershire, parsley, Italian seasoning, pepper, and parmesan and mix well to combine.
  • Bread Crumbs -- In a small pie plate or bowl, soak the bread slices in the milk for just 10-20 seconds and then squeeze out the liquid. Break up the bread in the bowl to add to the meatloaf mix. Stir well to combine.
  • Chicken -- Add the ground chicken to the bowl and mix to combine once again. Don't over mix, it can become tough. It's done.
  • Loafs -- First is to divide your meatloaf mix into 4 portions, for 4 loafs. Then layout a piece of wax paper or parchment paper and spray with non-stick spray (it will keep the meat from sticking), and then top it with enough mix for 1 of the loafs. Press down flat (like a small rectangle), it doesn't have to be perfect. Just not too thin because you are going to add the stuffing and then roll it.
  • Once the meat it flat, spread 1/4 cup of the mustard/honey sauce on top of the meat. Make sure to leave a 1/2" border around the edges. Then top with 1/4 cup swiss cheese, followed by 1 ham slice, 1/3 cup of the parmesan, and 1/4 cup more swiss cheese. Stuffing is done.
  • Form the Loaf -- Just roll up. I start at one of the long sides, and roll (just like rolling a buritto or sandwich roll). Once it is rolled, squeeze the ends together, so nothing leaks out, and slightly squeeze the whole roll so it is tightly sealed and form like a small loaf.
  • Topping -- Place all the loafs on a baking sheet lined with parchment paper, or you could use foil. Both work great for easy clean up. Brush each loaf, the top and sides with 1/8 cup mustard sauce per each loaf. Top with the bacon slices, going horizontally across the loaf (not lengthwise). Four slices should fit nicely going across the top, and make sure the bacon hangs over the sides going down to the bottom, this will give it great flavor. Done.
  • Bake -- 375 degree oven, middle shelf for about 45 minutes until golden brown and the bacon is crispy.
  • Serve -- As I said, I love to put them on a big serving tray because they are so pretty, The bacon forms natural slices, so I cut 1 or 2 slices off of a couple of loafs as needed to show off the pretty rolled filling.
  • Some mashed "spuds," or just a good baked potato, and some roasted asparagus in a foil pouch so NO extra pots or pans. ENJOY!
