Time 30m

Number Of Ingredients 11

1 pound skirt steak, cut into 1/2-inch-thick slices
4 teaspoons cornstarch
1/2 cup low-sodium chicken broth
2 tablespoons minced fresh ginger (from a 2-inch piece)
2 tablespoons black-bean garlic sauce, such as Kikkoman or Lee Kum Kee
1 teaspoon sugar
2 teaspoons toasted sesame oil
1/4 cup vegetable oil
4 cups small broccoli florets (from 1 head)
3 scallions, white and light-green parts thinly sliced (1/2 cup), plus darker greens, sliced, for serving
Cooked rice, for serving

Steps:

  • Pat meat dry, then toss with 3 teaspoons cornstarch. Stir together broth, ginger, black-bean sauce, sugar, sesame oil, and remaining 1 teaspoon cornstarch in a bowl. Measure 2 tablespoons water in a separate small bowl and set aside.
  • Heat a large, heavy skillet (preferably cast iron) or wok over high for 3 minutes. Swirl in 2 tablespoons vegetable oil. Working in batches to avoid crowding pan, brown meat, about 1 minute per side. Transfer to a plate.
  • Swirl in remaining vegetable oil and add broccoli. Cook, stirring occasionally, until broccoli begins to brown, about 3 minutes. Add reserved water and toss until broccoli is bright green and tender, 1 to 2 minutes more.
  • Add white and light-green parts of scallion to skillet along with meat and any accumulated juices. Stir in black-bean-sauce mixture and toss until evenly coated and sauce has thickened, about 30 seconds. Serve with rice, sprinkled with scallion greens.

Time 35m

Yield 4 servings

Number Of Ingredients 6

8 cups broccoli florets (about 1 1/2 pounds)
1/2 pound green beans
1/2 cup extra-virgin olive oil
2 cloves garlic, sliced thin
1/2 tablespoon crushed red pepper flakes, plus more if desired
Sea salt and freshly ground black pepper

Steps:

  • In a large pot, bring 6 quarts of salted water to a boil. Have ready a large bowl of ice water. Place broccoli into pot and cook for two minutes. You just want to parboil the broccoli at this point since you will saute it later on. Using a spider strainer, remove broccoli from pot and shock it in a bowl of ice water. When broccoli is completely cool, place it in a colander and allow to drain. Refresh the bowl of ice water. Bring the water back to a boil. Add green beans and cook for 4 minutes. Like the broccoli, you just want to parboil the green beans. Remove green beans from pot with spider strainer and add to ice water. When green beans are completely cool, add them to the colander and allow to drain.
  • In a large saute pan, heat olive oil. When almost smoking, add the garlic and saute for about 45 seconds. When the garlic starts to brown, remove immediately and discard. Overcooking the garlic will impart a very bitter taste to the dish. Add the red pepper flakes, broccoli and green beans to the pan and cook for 5 minutes. Season with salt and pepper. Serve immediately.

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 20m

Yield 6 servings

Number Of Ingredients 4

2 bundles broccolini, trim off ends
1 pound string beans, trimmed
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Heat the oven to 425 degrees F.
  • Arrange broccolini and beans on a cookie sheet. Coat the vegetables in oil and season with salt and pepper. Roast 15 to 18 minutes, until nutty and crispy at edges.

Tips:

  • Soak the black-eyed peas overnight. This will help to reduce the cooking time and make them more digestible.
  • Use a large pot. Black-eyed peas and broccoli expand as they cook, so you'll need a large pot to prevent them from boiling over.
  • Don't overcook the vegetables. Broccoli should be cooked until it is tender-crisp, and black-eyed peas should be cooked until they are just tender.
  • Season to taste. Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream.
  • Serve with your favorite sides. Black-eyed peas and broccoli can be served with rice, cornbread, or a salad.

Conclusion:

Black-eyed peas and broccoli is a delicious, healthy, and affordable meal that can be enjoyed by people of all ages. It is a good source of protein, fiber, and vitamins, and it can be easily customized to suit your own taste preferences. So next time you're looking for a quick and easy weeknight meal, give black-eyed peas and broccoli a try.
