Blackened salmon is a delectable dish that combines the rich flavors of blackened seasoning with the tender, flaky texture of salmon. The process of blackening involves coating the salmon with a spice blend, then searing it at high heat until a crisp, flavorful crust forms. This cooking method not only imparts a unique smoky flavor to the fish but also helps to lock in its natural juices, resulting in a moist and succulent dish. Blackened salmon can be served with a variety of sides, such as roasted vegetables, grilled lemon wedges, or a creamy dill sauce, to create a complete and satisfying meal. With its bold flavors and elegant presentation, blackened salmon is a perfect choice for any special occasion or as a weeknight dinner.

CAJUN BLACKENED SALMON

Cajun Blackened Salmon image

Yet another recipe from my mother-in-law, who is probably the best cook that I personally know. This is, hands down, our favourite way to eat salmon in our house - and we eat a lot of it! The spice portion can be doubled and stored for later - I typically double or triple the recipe and store it in an airtight jar so that it is available whenever I want it.

BLACKENED SALMON

Provided by Alex Guarnaschelli

Categories     main-dish

Time 12m

Yield 4 servings

Number Of Ingredients 8

1 tablespoon paprika
1 tablespoon cayenne
10 sprigs fresh thyme, washed, leaves removed and chopped
1 tablespoon freshly chopped oregano leaves
1 teaspoon kosher salt
4 (6 to 7-ounce) pieces salmon, pin bones removed, skin-on
3 to 4 tablespoons canola oil
2 lemons, zested and juiced

Steps:

  • In a small bowl, add the paprika, cayenne, thyme and oregano and salt and mix to blend. Put the mixture on a plate or other flat surface and coat the portions of salmon, 1 at a time, on the flesh side only.
  • Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke quite heavily shut the heat off under the pan. Add the salmon, 1 at a time, in a single layer, flesh side down, in the oil. Turn the heat back on under the pan and cook for 2 to 3 minutes. Use a spatula to turn the salmon to the other side. Cook the salmon over medium heat, until the skin becomes crispy, about 5 to 6 minutes.
  • Arrange the salmon on a platter, sprinkle with lemon zest and lemon juice and serve immediately.

BLACKENED SALMON FILLETS

Blackened Salmon Fillets image

This is a recipe I found on All Recipes. It's SPICY, tasty and a delicious way to serve salmon. I've altered the recipe quite a bit but will spell out both variations so you can make this recipe according to what suits your family. For instance, this recipe calls for a 1/2 cup of butter but I don't use any...just olive oil to brush the fillets with. Also, this recipe states to cook the fish entirely on the stove but I blacken for a few minutes and then bake at 400 for 10 minutes for perfectly cooked fish without an overly smoky kitchen!

Time 20m

Yield 4 , 4 serving(s)

Number Of Ingredients 12

2 tablespoons ground paprika
1 tablespoon ground cayenne pepper
1 tablespoon onion powder
2 teaspoons salt
1/2 teaspoon white pepper
1/2 teaspoon ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 lb salmon (fillets, skin removed)
2 tablespoons extra virgin olive oil (The original recipe calls for 1/2 cup butter)
olive oil flavored cooking spray

Steps:

  • In a small bowl, mix paprika, cayenne pepper, onion powder, salt, white pepper, black pepper, thyme, basil and oregano.
  • Brush salmon fillets EVOO until moist, and sprinkle evenly with the cayenne pepper mixture. Mist with EVOO spray (I use Garlic flavored EVOO spray).
  • In a large, heavy skillet over high heat, cook salmon, until blackened, 2 to 5 minutes. Turn fillets, brush with remaining EVOO , and continue cooking until blackened and fish is easily flaked with a fork.
  • At this point, I bake at 400 for 10 minutes or until desired doneness (I like mine well done). If you don't like yours well done, skip the baking stage.

THE BEST CAJUN BLACKENED SALMON EVER.

The Best Cajun Blackened Salmon Ever. image

We eat a lot of salmon (at least once a week) and this is by far my favorite way of preparing it. It's really quite simple, and the end result is so delicious. The sweetness of the apple juice/white wine combined with the spiciness of the Cajun seasoning is amazing. The blackened texture of the fish is also great. Not your typical boring salmon!

SHEET PAN BLACKENED SALMON WITH GARLICKY KALE

Sheet Pan Blackened Salmon with Garlicky Kale image

Provided by Alex Guarnaschelli

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 12

4 tablespoons extra-virgin olive oil, divided use
Four 8-ounce portions wild salmon, skin on, pin bones removed
Kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1 teaspoon garlic powder
1 teaspoon dry mustard powder
1 large bunch Tuscan kale, (about 12 ounces) stemmed and torn into bite-size pieces
4 large garlic cloves, minced
1 teaspoon dried oregano
Grated zest and juice from 1 large lime
1 teaspoon honey

Steps:

  • Preheat oven to 400F. Set an oven rack in the lower-middle position.
  • Prepare the salmon: Use 1 tablespoon of the olive oil to grease the bottom of a rimmed sheet pan. Place the salmon, skin side down, on a flat surface and season with salt. In a small bowl, mix together the cayenne pepper, paprika, garlic powder, and mustard and set aside. Sift an even layer of the spices over the salmon and arrange filets skin side down, on the baking sheet, with space between each.
  • Prepare the kale: In a medium bowl, massage the kale with the remaining 3 tablespoons olive oil and the garlic. Arrange it all around (but not covering) the fish on the pan. Sprinkle the oregano on top of the salmon.
  • Cook the salmon: Place the pan in the lower-middle rack and roast for 10 to 12 minutes for medium to medium-rare salmon. (For well-done fish, leave in the oven an additional 5-8 minutes.) Remove the pan from the oven and sprinkle all of the lime zest and juice over the fish. Drizzle with honey. Serve immediately.

Provided by chavamandel

Categories     Very Low Carbs

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 11

8 -10 ounces salmon steaks
3/4 lb unsalted butter (olive oil works better)
1 tablespoon sweet paprika
1/2 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cayenne powder
3/4 teaspoon white pepper
3/4 teaspoon ground black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves

Steps:

  • Each steak works best if it is about 3/4 inches thick, especially when using a cast iron skillet. Coat each stake with the butter (or olive oil) and let sit while the rest of the butter/olive oil heats up in the pan. After about 10 minutes, coat each stake on both sides with the seasoning mix and let it cook for around 2 minutes uncovered. Afterwards, flip it over and cook the stakes until they are a nice pink color inside. The time that it takes to cook each stake determines on how large they are.

SLAMMIN BLACKENED SALMON

Slammin Blackened Salmon image

This is the easiest and most delicious meal that I make! It turned my non-fish eating husband into a salmon maniac! It is quick simple and so luxurious. I have wowed many a guest with this simple recipe.

Provided by Hil-Billy

Categories     Very Low Carbs

Time 17m

Yield 2-4 serving(s)

Number Of Ingredients 3

1 lb salmon fillet (preferrably fresh but frozen works well too! Just cook it alittle longer.)
blackening seasoning (I like Zatteran's found at most supermarkets)
olive oil

Steps:

  • Remove salmon from package and rub with blackening seasoning on skin free side.
  • Use just enough to cover the piece of fish but not so much that you can't see the pink behind the seasoning.
  • Heat grill pan on med heat and brush lightly with olive oil (very lightly) Place salmon skin side down on pan and cook on med heat until half of the salmon (from the bottom up) is opaque.
  • Flip salmon and remove skin (it will peel off very easily and usually in one piece- I place it in a small plastic bag and tie it before dropping it in the garbage can to reduce fishy odors) Cook another 5-8 minutes until the entire piece of fish is opaque and runs with a white milk like substance (healthy omega fatty acids) Serve immediately with rice or potato and veggie of your choice for a healthy meal that tastes like you're at a restaurant even when you cooked it yourself!

BLACKENED SALMON WITH SPINACH AND BLACK-EYED PEAS

Blackened Salmon with Spinach and Black-Eyed Peas image

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

4 6-ounce skinless center-cut salmon fillets
Kosher salt and freshly ground pepper
2 1/2 teaspoons Cajun seasoning
2 tablespoons extra-virgin olive oil
2 stalks celery, chopped
3 scallions, thinly sliced
3 cloves garlic, minced
1 15-ounce can black-eyed peas, drained and rinsed
1 1/2 cups low-sodium chicken broth
4 cups baby spinach (about 3 ounces)
2 teaspoons green hot sauce

Steps:

  • Season the salmon on both sides with salt, pepper and the Cajun seasoning; set aside. (If your Cajun seasoning contains salt, do not season the salmon with additional salt.) Heat 1 tablespoon olive oil in a medium saucepan over medium-high heat. Add the celery and a pinch of salt. Cook, stirring, until the celery starts to soften, about 4 minutes. Stir in 2 sliced scallions and the garlic; cook until softened, about 1 minute. Add the black-eyed peas and chicken broth. Cover and bring to a boil over high heat, then uncover and reduce to a simmer. Mash about 1/4 cup of the beans against the side of the pan with a wooden spoon. Simmer until the broth is thickened, 8 to 10 minutes.
  • Meanwhile, heat a large nonstick skillet over high heat. Rub the remaining 1 tablespoon olive oil all over the salmon. Add to the skillet, curved-side down; reduce the heat to medium high and cook until blackened on the bottom, 3 to 5 minutes. Flip, reduce the heat to medium and continue cooking until browned on the other side, 2 to 3 minutes for medium rare to medium.
  • Add the spinach and hot sauce to the beans; stir until wilted, about 30 seconds. Add more salt and pepper, if needed. Divide the beans and salmon among shallow bowls. Top with the remaining sliced scallion.

This is a great way to grill salmon. It's easy and quick to prepare (no marinating, no resting time). • To assemble the dish: Place the blackened salmon on top of the wilted greens and mushrooms, and top it with 1 teaspoon of the orange-rosemary butter. Serve with your favorite wild rice blend and honey-glazed carrots.

Tips:

  • Choose the right salmon fillet: Look for a thick, firm fillet with evenly distributed marbling. Avoid fillets with any brown or gray spots, as these are signs of spoilage.
  • Blackening spices: The key to blackened salmon is the spice mixture. Use a combination of paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. You can also add other spices, such as thyme, oregano, or cumin, to taste.
  • Get a good sear: Blackened salmon should have a crispy, blackened crust. To achieve this, heat your skillet or grill over high heat before adding the salmon. Make sure the salmon is dry before searing, as this will help it to brown evenly.
  • Don't crowd the pan: If you're cooking multiple pieces of salmon, make sure to leave enough space between them so that they can cook evenly. Crowding the pan will prevent the salmon from getting a good sear.
  • Cook the salmon to your desired doneness: Blackened salmon can be cooked to any degree of doneness, from rare to well-done. The FDA recommends cooking salmon to an internal temperature of 145°F (63°C).

Conclusion:

Blackened salmon is a delicious and versatile dish that can be enjoyed for lunch or dinner. It's a great way to get your daily dose of omega-3 fatty acids, and it's also a good source of protein and vitamin D. With its crispy, blackened crust and flavorful spice mixture, blackened salmon is sure to be a hit with your family and friends.
