2½ cups old-fashioned rolled oats
3 ripe bananas medium-sized
¼ cup maple syrup
2 large eggs
1 tsp baking soda
1 tsp cinnamon
¼ tsp salt
rolled oats
pecans

Steps:

  • Preheat oven to 375°F (190°C).
  • Line an 8x4-inch loaf pan with foil and spray.
  • Blend all ingredients (besides optional toppings) in a blender or food processor.
  • Pour into loaf pan. Add optional toppings if desired.
  • Bake for about 40 minutes, until a toothpick comes out clean.
  • Allow loaf to cool completely before removing from the pan.
  • Once completely cooled, store in an airtight container, or freeze.
  • Lasts 4-5 days in the fridge or 1 month in the freezer.

½ cup buttermilk
2 eggs
½ cup vegetable oil
1 cup white sugar
2 small very ripe bananas, sliced
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
⅛ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • In a blender, combine milk, eggs, oil, sugar, banana pieces, and vanilla extract. Process until smooth. In a large bowl, sift together all the flour, cinnamon, baking powder, baking soda, and salt. Add banana mixture to dry ingredients. Mix well. Stir in nuts. Pour batter into prepared pan.
  • Bake in preheated oven for 55 to 60 minutes until golden brown, an a toothpick inserted into center of the loaf comes out clean.

This is an adapted classic banana bread recipe, made healthier by swapping some ingredients.

1 1/2 cups white whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup pecans or walnuts pieces
1/4 cup sugar (sucanat, or coconut palm sugar)
1/2 cup low-fat vanilla yogurt
2 eggs or egg substitute equivalent
2 small bananas (or more if you LOVE banana!)
1/4 cup coconut oil
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350˚F (176˚C). Spray an 8 1/2-inch x 4 1/2-inch loaf pan with cooking spray.
  • Combine flour, sugar, baking soda, and salt in a medium-size bowl. Set aside.
  • Place eggs or substitute, coconut oil, yogurt, bananas, and vanilla into your jar in the order listed and secure lid.
  • For Blendtec: Press the BATTERS button. Pour batter into dry ingredients and use a spatula to gently mix until just combined. If you have WILDSIDE jar, you can now add the dry ingredients and pulse to combine. Then add nuts and continue to pulse 1-3 times until combined.
  • For Vitamix: Start on speed 1, turn machine on and slowly increase to speed 5. Blend for 10-15 seconds or until mixed. Pour batter into dry ingredients and mix gently by hand to combine.
  • Stir nuts into batter, reserving some to sprinkle on top.
  • Bake for 60 minutes or until a knife inserted into the center comes out clean.

1 ½ cups whole wheat flour
13.5 ounces coconut milk (13.5 oz usually = 1 can)
¾ cup coconut or brown sugar
¼ cup coconut oil
1 tablespoon flaxseed meal
1 tablespoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 extra banana for topping (optional)

Steps:

  • Preheat your oven to 350°F.

  • In blender chop nuts for 10 seconds.

1/3 cup natural sweetener Swerve or xylitol (you can also use coconut sugar or brown sugar, but it won't be low-carb)
1/3 cup unsweetened almond butter
2 teaspoons pure vanilla extract
2 cups almond flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1/3 cup sugar-free chocolate chips

Steps:

  • Preheat the oven to 350F and grease a 9" x 5" loaf pan with cooking spray or line the pan with parchment paper so the paper overhangs two sides like handles.
  • Add all of the ingredients to a blender except the chocolate chips and blend until completely smooth and combined. You may need to stop to scrape down and stir the ingredients.
  • Add the chocolate chips to the blender and with a spatula, stir well to combine.
  • Pour the batter into the prepared loaf pan and sprinkle with additional chocolate chips.
  • Bake for 35 to 45 minutes until the center has set up and a toothpick inserted in the center comes out clean.
  • Turn off the oven and allow the loaf to sit in the hot oven for 5 minutes.
  • Remove from the oven and allow it to cool completely in the pan for at least 1 hour.

½ tsp. Baking soda
3.5 Medium, ripe & spotty bananas. (Or 2.5 large)
3 - 5 Tbsp Maple Syrup
2 large eggs, at room temperature
Optional enhancements: Dash of salt, cinnamon, chocolate chips, walnuts, cacao nibs

Steps:

  • Preheat oven to 350 and grease a loaf pan with coconut oil, or line with parchment paper.
  • Blend oats and baking soda in blender until flour-like consistency achieved. Set aside in a bowl.OPTIONAL (Recommended): Add a dash of salt and cinnamon to your oat flour and mix in.
  • Add to blender: 3 Medium (or 2 large) bananas, 2 eggs, and Maple syrup, to your desired sweetness. Blend until everything is combined.

Easy healthy banana bread image

This gluten free healthy banana bread recipe is so easy to make using a blender and a handful of pantry staples. Perfect as a make-ahead breakfast or snack.

3 large bananas
3 eggs
½ cup milk of your choice
2 tbsp canola/vegetable oil
3 tbsp sweetener of your choice ((I used raw sugar but you can use honey or coconut sugar))
3 cups rolled oats
2½ tsp baking powder
1 tsp salt
1 tsp ground cinnamon
½ cup dark chocolate chips
1 tsp vanilla extract

Steps:

  • Add the bananas, eggs, milk, oil, sweetener, oats, baking powder, salt and cinnamon to a blender in that order. (Adding the wet ingredients first will allow the blender to easily blend the batter.)
  • Blend until smooth, stopping and scraping down the blender if needed.
  • When the batter is smooth, fold in the chocolate chips with a rubber spatula.
  • Pour the batter into the prepared loaf pan then transfer to the oven.
  • Bake the banana bread for 1 hour and 20 minutes, covering with foil after 30 minutes if the bread is browning too fast.
  • The banana bread is ready when it is golden brown and risen and firm to the touch. A skewer inserted should come out with moist crumbs.
  • Remove the banana bread from the oven and allow to cool for 20 minutes in the pan before removing and allowing to cool completely on a wire rack.
