I like this easy recipe to give out as gifts. It is sort of in the line of a "Chex Mix" but it is white (hence the white chips). The caramels and white chocolate chips as a sweet taste to the saltiness of the peanuts and pretzels. It is crunchy and goes quickly!

2 cups Crispix cereal
2 cups small pretzels
1 cup dry roasted peanuts
1 cup caramel, coarsely chopped (about 20)
2 cups white chocolate chips (12-oz)

Steps:

  • Spray a 13"x9" baking pan with Pam.
  • Combine cereal, pretzels, peanuts and caramels in large bowl.
  • Microwave white chocolate chips for l minute.
  • Microwave an additional 10-12 seconds stirring until smooth.
  • Pour over cereal mixture.
  • Stir to coat evenly.
  • Spread mixture into baking pan and let stand 20-30 minutes.
  • Break into pieces.

3 cups crisp wheat cereal, such as Wheat Chex
3 cups crisp rice cereal, such as Rice Chex
2 cups pretzel sticks
2 cups mixed nuts
1 to 1 1/2 sticks (8 to 12 tablespoons) salted butter
3 tablespoons Worcestershire sauce
1 teaspoon seasoned salt, such as Lawry's
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon onion powder
6 to 12 dashes hot sauce, such as Tabasco
3 to 5 cloves garlic, mashed

Steps:

  • Preheat the oven to 250 degrees F.
  • Dump the corn, wheat and rice cereal into a large mixing bowl. Add the pretzel sticks and nuts.
  • In a microwave-safe bowl, add the butter, Worcestershire, seasoned salt, paprika, chili powder, onion powder, hot sauce and garlic and microwave until the butter is melted. Stir together and toss into the cereal mixture, stirring as you go.
  • Transfer the mixture to 1 or 2 baking sheets and bake for 1 hour 15 minutes, stirring every 15 minutes. Let cool and store in an airtight container.

3 cups all-purpose flour (see Cook's Note)
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 1/2 cups sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
Blue gel food coloring
6 vegan marshmallows, cut in half
1/2 cup blue decorative sprinkles

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Beat the butter and sugar in a stand mixer fitted with the paddle attachment on medium-high speed until fluffy, about 3 minutes. Add the egg and beat until combined, scraping down the bowl as needed. Add the vanilla and beat to combine.
  • With the mixer on low speed, gradually add the flour mixture and beat until incorporated. Transfer half of the dough to a medium bowl. Add 4 to 5 drops of the blue gel food coloring to the remaining dough and mix on low until combined.
  • Use an ice cream scoop or large spoon to drop spoonfuls of the cookie dough into a medium bowl, alternating the colors, until all the dough has been scooped. Cover and freeze until firm, about 20 minutes.
  • Line 2 baking sheets with parchment paper. Scoop 12 balls of dough (about 1/4 cup each) with a large ice cream scoop or a measuring cup onto the prepared baking sheets, spacing the dough 2 inches apart.
  • Flatten each portion of dough and put a marshmallow half in the center. Fold up the cookie dough, pinching to seal, so that the marshmallow half is completely sealed. Roll into a smooth ball and roll the top in the sprinkles. Repeat with the remaining cookie dough. Refrigerate until firm, about 15 minutes.
  • Meanwhile, preheat the oven to 375 degrees F.
  • Bake the cookies until lightly golden around the edges, 15 to 20 minutes. (If marshmallow cracks through the top, no need to worry! It will settle back down as it cools). Let cool 5 to 10 minutes on the baking sheets.
