1 1/2 pounds (about 60) cooked peeled deveined medium shrimp, thawed if frozen
1/2 cup tomato juice
1/4 cup vodka, if desired
1/2 teaspoon red pepper sauce
1/2 teaspoon sugar
1/2 teaspoon celery salt
2 tablespoons chopped fresh parsley
1 cup cocktail sauce
1/4 cup finely chopped green olives

Steps:

  • Arrange shrimp in single layer in rectangular glass or plastic dish, 11x7x1 1/2 inches.
  • Heat tomato juice, vodka and pepper sauce to boiling in 1-quart saucepan over medium-high heat. Stir in sugar; reduce heat. Simmer uncovered 5 minutes, stirring occasionally. Stir in celery salt and parsley; pour over shrimp. Cover and refrigerate 2 to 3 hours.

6 cups water
1 lemon, halved
1 cup dry white wine
1 bay leaf
1/2 teaspoon peppercorns
Salt
1 bottle of your favorite vodka
1 bottle of a good store bought Bloody Mary mix
1 teaspoon cracked pepper
Hot sauce, to taste
Worcestershire sauce
Olive juice, to taste
Bamboo skewers, soaked in water for 30 to 60 minutes

Steps:

  • 1 pound large shrimp, peeled and deveined
  • Place 6 cups of water in a medium saucepan. Add lemon halves, white wine, bay leaf, peppercorns and salt, to taste. Bring to a boil and add the shrimp. Cook for 1 minute or until the shrimp turn pink. Immediately plunge shrimp into a bowl of ice water to stop the cooking process. Strain the shrimp and place into a bowl in the refrigerator until ready to use. In a large pitcher, mix 1-ounce vodka for every 6 ounces Bloody Mary mix. Season with cracked pepper, hot sauce, Worcestershire sauce, olive juice and shake. Serve in decorative glasses with skewered shrimp as garnish.

1 pound frozen peeled cooked shrimp (16- to 20-count), defrosted, tails removed, cut into 1/4-inch pieces
3/4 cup bloody Mary mix
1 1/2 teaspoons celery salt
Juice of 1 lime
4 cups frozen white rice
2 tablespoons minced fresh cilantro
2 tablespoons minced red onion
1 avocado, diced
Hot sauce, as desired, optional
Kosher salt and freshly ground black pepper
Plantain chips, for serving

Steps:

  • In a ziptop bag, combine the shrimp with the bloody Mary mix, 1 teaspoon of the celery salt and half of the lime juice. Cover and refrigerate for 3 to 4 hours.
  • Cook the frozen rice according to the package instructions. Cool to room temperature.
