1/2 c brown sugar
1/2 c flour
1/2 c butter
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 c chopped nuts (optional)
CAKE
2 c flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
3/4 c sugar
1/4 c butter, softened
1 large egg
1 tsp vanilla extract
1/2 c buttermilk
3 c fresh blueberries (or frozen, but do not thaw!)

Steps:

  • 1. Preheat the oven to 375 degrees. Grease a 9″ square pan and set aside. In a medium bowl, combine the first 6 ingredients, mixing together with a fork until crumbly; set aside.
  • 2. In another medium bowl, stir together the flour, baking powder, salt and cinnamon.
  • 3. In a large bowl, cream together the remaining butter and sugar. Blend in the egg and vanilla until smooth. Blend in the flour mixture and cream alternately, beginning and ending with the flour (flour, milk, flour, milk, flour). Fold in the blueberries. (The dough is quite stiff, so be patient as you're folding in the berries! Don't mush them up!)
  • 4. Spread the batter into the prepared pan and sprinkle with the crumble topping. Bake for 50-60 minutes, until a toothpick inserted in the center of the cake comes out clean. Cool, and cut into 9 large squares.

CAKE BATTER
2 c all purpose flour
1/2 c granulated sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/4 c butter, softened
1 c sour cream
1 1/2 tsp vanilla extract
1 large egg
1 c fresh blueberries
CRUMB TOPPING
1/2 c all purpose flour
1/2 c granulated sugar
3/4 tsp ground cinnamon
1/4 c cold butter cut into pieces
OPTIONAL GLAZE
1/2 c confectioners' sugar
1 1/2 tsp milk
1/4 tsp vanilla or lemon extract

Steps:

  • 1. Grease a 9 inch round or square cake pan. Preheat oven to 350 degrees
  • 2. Mix the crumb topping in a small bowl with a fork or clean fingers. Set aside.
  • 3. In a medium bowl, mix the batter ingredients together (except for the blueberries) until all dry ingredients are moistened. Batter will be stiff. Fold in blueberries. Spread batter into prepared pan. Bake for 35-40 minutes until a toothpick tests dry in center of cake. Cool in pan for ten minutes. Remove to a cake dish.
  • 4. Prepare the glaze topping . Stir until the glaze is of consistency to drizzle. A few more drops of milk may be used if needed. Drizzle glaze over slightly warm cake. May be served warm or cold. Keep covered tightly at room temperature.

FOR THE CAKE:
6 Tbsp unsalted butter, at room temperature
3/4 c granulated sugar
2 eggs
1 tsp vanilla
2/3 c sour cream
zest of 1 lemon
1 1/4 c all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 c frozen or fresh blueberries
confectioners' sugar, for sprinkling
FOR THE STREUSEL:
1/4 c granulated sugar
1/3 c brown sugar, packed
1 tsp ground cinnamon
1/8 tsp nutmeg
1/4 lb unsalted butter, melted
1 1/3 c all-purpose flour

Steps:

  • 1. Pre-heat oven to 350 degrees. Butter and flour a 9-inch round cake pan. Set aside.
  • 2. Make the cake first. Cream butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. Reduce speed to low and add eggs, one at a time.
  • 3. Then, add vanilla, lemon zest and sour cream.
  • 4. While that is mixing, prepare your dry ingredients. Sift the flower, baking powder, baking soda and salt in a medium bowl. Working in batches, slowing add dry ingredients to your wet mixture until all has been incorporated. You may have to scrape down sides with a spatula.
  • 5. Fold in blueberries and give a stir with your spatula to ensure all batter is mixed.
  • 6. Pour mixture into your floured and buttered cake pan.
  • 7. Prepare the streusel. Combine both sugars, cinnamon and nutmeg. Stir in melted butter and then flour. With your hands, mix until a pasty dough is formed.
  • 8. Crumble evenly over cake.
  • 9. Bake for 40 minutes or until a cake tester comes out clean.
  • 10. Cool completely and serve sprinkled with confectioners' sugar.

1/4 cup sugar
1/3 cup (packed) light brown sugar
1/3 cup all-purpose flour

1 pint (2 cups) fresh blueberries (preferably fresh, or frozen, not thawed)
2 cups plus 2 teaspoons all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon freshly grated nutmeg
2/3 cup sugar
Grated zest of 1/2 lemon or 1/4 orange
3/4 stick (6 tablespoons) unsalted butter, at room temperature
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
1/2 cup buttermilk

Steps:

  • Getting ready: Center a rack in the oven and preheat the oven to 350 degrees. Butter an 8x8-inch pan (Pyrex is great for this) and put it on a lined baking sheet.
  • To make the crumbs: Put all the ingredients except the nuts in a food processor and pulse just until the mixture forms clumps and curds and holds together when pressed. Scrape the topping into a bowl, stir in the nuts and press a piece of plastic against the surface. Refrigerate until needed. (Covered well, the crumb mix can be refrigerated for about 3 days.)
  • To make the cake batter: Using your fingertips, toss the blueberries and 2 teaspoons of the flour together just to coat the berries; set aside. Whisk together the remaining 2 cups flour, the baking powder, soda, salt, cinnamon and nutmeg.
  • Working in the bowl of a stand mixer or in another large bowl, rub the sugar and zest together with your fingertips until the sugar is moist and aromatic. Add the butter and, with the paddle or whisk attachment, or with a hand mixer, beat the sugar with the butter at medium speed until light, about 3 minutes. Add the eggs one by one, beating for about 1 minute after each addition, then beat in the vanilla extract. Don't be concerned if the batter looks curdled - it will soon smooth out. Reduce the mixer speed to low and add the flour mixture and the buttermilk alternately, the flour in 3 parts, the buttermilk in 2 (begin and end with the dry ingredients). You will have a thick, creamy batter. With a rubber spatula, gently stir in the berries.
  • Scrape the batter into the buttered pan and smooth the top gently with the spatula. Pull the crumb mix from the refrigerator and, working with your fingertips, break it into pieces. There's no need to try to get even pieces - these are crumbs and they're supposed to be lumpy and bumpy and every shape and size. Scatter the crumbs over the batter, pressing them down ever so slightly.
  • Slide the sheet into the oven and bake 55 to 65 minutes, or until the crumbs are golden and a knife inserted into the center of the cake comes out clean. Transfer the cake to a rack and cool just until it is warm or until it reaches room temperature.
