2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh blueberries
1 cup buttermilk
1 tablespoon raw sugar (optional)

Steps:

  • Preheat the oven to 350. Grease a 11x7 inch baking dish.
  • In a large bowl, mix together the oil, sugar and molasses until well blended. Beat in the egg.
  • In a separate bowl, stir together the flour, cinnamon, nutmeg, ginger, baking soda and salt. Remove 2 tablespoons of the flour mixture, and toss with blueberries to coat.
  • Stir the dry mixture into the wet mixture alternating with the buttermilk, mixing after each addition. Carefully stir in blueberries.
  • Pour the batter into the prepared pan, and sprinkle optional sugar over the top.
  • Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.

Tips:

  • Prep your ingredients: Before you start baking, measure and prep all of your ingredients. This will help ensure that you have everything you need and that your cake turns out perfectly.
  • Use fresh blueberries: Fresh blueberries will give your cake the best flavor. If you don't have fresh blueberries, you can use frozen blueberries, but thaw them before using.
  • Don't overmix the batter: Overmixing the batter can make your cake tough. Mix the batter just until the ingredients are combined.
  • Bake the cake in a preheated oven: A preheated oven will help ensure that your cake bakes evenly.
  • Let the cake cool completely before frosting: This will help prevent the frosting from melting.

Conclusion:

This blueberry gingerbread cake is a delicious and easy-to-make dessert. It's perfect for any occasion, and it's sure to be a hit with your family and friends. So next time you're looking for a tasty treat, give this recipe a try. You won't be disappointed!
