Number Of Ingredients 10

1 cup instant (quick-cook) oats
3/4 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons coconut oil, melted
1 egg, room temperature
1 teaspoon vanilla extract
1/2 cup honey
1/4 cup dried blueberries

Steps:

  • In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey until thoroughly incorporated. Add in the flour mixture, stirring just until incorporated. Fold in the blueberries. Chill the dough for at least 30 minutes. (If chilling longer, cover with plastic wrap, ensuring it touches the entire surface of the cookie dough.) Preheat the oven to 325°F, and line a baking sheet with parchment paper or a Silpat. Drop the cookie dough into 15 rounded scoops on the baking sheet. (If chilled longer than 1.5 hours, flatten each slightly.) Bake at 325°F for 13 to 15 minutes. Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.

Tips:

  • Use fresh or frozen blueberries. Fresh blueberries are ideal, but frozen blueberries will work just fine. If using frozen blueberries, thaw them before using.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool on a wire rack before serving. This will help them to set and firm up.

Conclusion:

Blueberry oatmeal cookies are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack. They are also a great way to use up leftover blueberries. With their chewy texture and sweet blueberry flavor, these cookies are sure to be a hit with everyone who tries them.
