BLUEBERRY PINEAPPLE BUCKLE
I was searching around for a recipe to use my Molly's Recipe#376373 and found this great recipe on Betty Crocker website. It tasted great with the faux pineapple and I bet would taste great with regular pineapple as well. The pineapple sauce is a bit thin so feel free to add more cornstarch to thicken it up.

Tips:
- For a sweeter buckle, use fresh or frozen blueberries that are ripe and juicy.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
- The buckle batter should be slightly thick and lumpy. If it's too thin, it will spread too much in the pan and won't have a good crumb.
- Don't overmix the batter. Overmixing will make the buckle tough.
- Bake the buckle until a toothpick inserted into the center comes out clean. If it's not done, continue baking for a few more minutes.
- Let the buckle cool for at least 15 minutes before serving. This will help it set and make it easier to slice.
Conclusion:
Blueberry pineapple buckle is a delicious and easy-to-make dessert that is perfect for any occasion. It's moist, flavorful, and has a delicious crumb topping. The combination of blueberries and pineapple gives it a sweet and tangy flavor that everyone will love. If you're looking for a classic dessert that is sure to please a crowd, blueberry pineapple buckle is the perfect choice.
