My next door neighbors mother gave me this recipe. It was one of her mothers little cakes she often made to go along with tea or coffee. Very easy to make and very, very tasty.

1 cup sugar
1 cup raisins
1 cup cold water
1/2 cup shortening
1 teaspoon cinnamon
1 teaspoon clove
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Place sugar, raisins, water, shortening, cinnamon, and cloves in a saucepan and bring to a boil.
  • Boil for 5 minutes and remove from heat.
  • Immediately add flour, baking soda, salt and stir in.
  • Pour into a 8"x8" pan.
  • Bake at 350 degrees for 30 minutes.
  • Prep time includes the boiling.

3 cups unbleached white flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 1/2 cups sugar
1 1/2 cups raisins
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
3/4 cup vegan margarine
1/2 cup chopped pecans
2/3 cup fresh lemon juice, for glaze
3 cups confectioners' sugar, for glaze

Steps:

  • To make Cake: Preheat oven to 350°F Sift together flour, baking powder and baking soda in bowl. Spray 12-cup Bundt pan with cooking spray, and set aside.
  • Combine sugar, raisins, cinnamon, nutmeg, cloves, 1/2 teaspoons salt and 1 1/2 cups water in large saucepan. Bring to boil, and cook 5 minutes, or until raisins plump up. Remove from heat, and stir in margarine.
  • When margarine has melted, add flour mixture and pecans to saucepan. Blend well, and pour into pan. Bake 35 to 45 minutes, or until toothpick inserted in cake comes out clean. Cool 10 minutes in pan, then invert onto wire rack and cool completely.
  • To make Glaze: Whisk lemon juice into confectioners' sugar. Pour over cooled cake. Decorate with whole pecans, if desired.

1-1/2 cups water
1/2 cup shortening
2 cups packed brown sugar
3 cups all-purpose flour

1 cup buttermilk
1 teaspoon baking soda
3 large eggs, beaten
Confectioners' sugar

Steps:

  • In a saucepan, combine raisins and water. Cook until plump. Drain and set aside raisins, reserving 10 tablespoons cooking liquid. , In a bowl, cream shortening and sugar. Combine flour, cinnamon, cloves nutmeg and salt; set aside. Combine milk, soda, eggs and reserved cooking liquid. Add dry ingredients alternately with milk mixture to creamed mixture. Stir in cooked raisins. Pour into a greased 13x9-in. baking pan. , Bake at 350° for 35-40 minutes or until a toothpick comes out clean. Cool on a wire rack. Just before serving, sprinkle with confectioners' sugar.

150g Soft Brown Sugar
110g Butter
250ml Milk
300g Self Raising Flour

Steps:

  • Grease and line a 2lb bread tin.
  • In a saucepan add the fruit, sugar, milk and butter. Bring to a gentle boil stirring all the time.
