7 slices white bread, crusts removed and cubed
2 cups shredded cheddar cheese
6 large eggs, lightly beaten
3 cups 2% milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked and crumbled

Steps:

  • In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

½ cup buttermilk
1 cup sliced bacon, diced
1 small onion, diced
3 large eggs eggs, beaten
½ cup Swiss cheese, shredded

Steps:

  • Preheat oven to 450 degrees F.
  • Prepare Idahoan Steakhouse Cheesy Hashbrown Potatoes, following packaging directions, replacing the 1/2 cup milk with 1/2 cup buttermilk.

The thing I like the best about this breakfast casserole is that it is made the night before Christmas, and it sits in the fridge and blends all the great flavors together. The next morning, you pop it in the oven, and when the aroma wafts through the house, then you know that Christmas has finally arrived. This is our Christmas Morning Casserole, and I hope you enjoy it as much as we do every Christmas morning! Enjoy!

12 - slices of cubed bread (i use texas toast bread)
1/2 - pound of medium sharp shredded cheese
8 - eggs
2 - cups of milk
2 - cups of ground ham, shrimp, crabmeat, mushrooms or crumbled bacon.
1/2 - stick of butter, melted

Steps:

  • THE NIGHT BEFORE CHRISTMAS: Use Pam spray and grease a 9X13 baking dish.
  • Prepare the bread. I use frozen Texas toast bread. (easier to cube frozen, thaw slightly) You can use French bread if Texas toast is not available. Remove the crusts from the bread, cut into 1/2 inch cubes, and place the cubes in the baking dish.
  • Top with the cheese. Beat the eggs and add to the milk and pour over the bread and cheese. Top with cooked ground ham, cooked sausage, shrimp, crabmeat, mushrooms or crumbled bacon, whatever you desire. (I've tried them all, and they are all yummy!) Pour the melted butter over all. Cover with saran wrap and refrigerate overnight.
  • CHRISTMAS MORNING: Remove the casserole from the fridge, and heat it up slowly so your cold dish doesn't break. I let mine sit on the counter for about an hour and put it in the oven when I put it on pre-heat. Bake at 350 degrees for 35 minutes to 45, depending on the heat of your oven and the altitude. High altitude may take almost an hour to bake. Check periodically with toothpick. When your casserole is done, cover loosely with foil and let rest for 10 minutes so when you cut it, it will come out of the dish in a square.
  • Cook's Tip: My original recipe called for a whole stick of butter, but I found that 1/2 stick works just fine for us. This is a good recipe for you to make your own. If you have some favorite ingredients that you would like to see added for Christmas morning, have at it! Enjoy!

I got this recipe from the Cooking in the West with WAASCOE cookbook. It has been a family favorite for years now. My daughter looks forward to Christmas knowing that this will be served for breakfast. It is good anytime of the year though. I hope it becomes a family favorite of yours also.

3/4 cup milk
1 cup cream of mushroom soup
1 cup drained sliced mushrooms
6 slices bread
1 lb bulk sausage, crumbled,fried and cooled
1 cup grated cheese
salt and pepper

Steps:

  • Beat eggs, milk and soup.
  • Add mushrooms.
  • Spray or grease a 9x13 inch pan.
  • Remove crust from bread, butter bread slices and then place butter side down in bottom of pan.
  • Pour egg mixture over the bread slices.
  • Top with sausage.
  • Sprinkle with cheese.
  • Refridgerate overnight.
  • Bake at 350 degrees for 45 min or until done in middle when tested with knife.
  • I use homemade french bread that I made in the bread machine with this recipe.
  • I also just put the whole can of mushroom soup in and use a little more cheese than it calls for.
  • We do love the cheese!

Another winner from the ladies at Gooseberry Patch--I've been making some version of this for YEARS!--and the family loves it no matter what I throw in the pan. The recipe calls for Monterey Jack cheese, but I've had equally good results with Cheddar or a mixture of Ched with Swiss or Provolone. And I've NEVER thawed the hash-browns (having not enough sense to actually PLAN much ahead it seems!), so you can folllow the recipe and thaw them, or fly by the seat of your pants and use them frozen. Also...if you add MORE meat, you'll have a main dish meal for a busy weeknight when everyone is flying in and out the door at a different time. My, my! All these choices!
