BONNIE'S MEXICAN POTATO SALAD

BONNIE'S MEXICAN POTATO SALAD image

This Mexican Potato Salad is a different twist on an old favorite with a little bit of kick to the taste buds! It goes really well with just about any kind of beef, pork, or barbecued chicken. Enjoy!

Provided by BonniE ! @ReikiHealsTheSoul

Categories     Potato Salads

Number Of Ingredients 13

2 - pounds medium red potatoes unpeeled.
6 - hard cooked eggs
1/4 - cup vegetable oil
1 - stalk celery, chopped
1/2 - red bell pepper, chopped
1/4 - cup of green onions tops, chopped
1 - sweet pickle, finely chopped
2 - tablespoons fresh cilantro minced
2 - teaspoons fresh lime juice
1 - teaspoon white vinegar
3/4 - cup mayonaise
1 - teaspoon hot pepper sauce
- salt and pepper to taste

Steps:

  • Please read through the instructions before you make the recipe, because some of the ingredients go in separately to make the dressing.
  • Boil the eggs and cool. Separate the eggs from the whites. Set aside. Quarter the red potatoes and boil them in water with a teaspoon of salt. Make sure they are done, but not over cooked. Drain thoroughly, and cool the potatoes and then dice them.
  • In a large bowl, mash the egg yolks, stir in the oil, vinegar and lime juice. Add mayonaise, pepper sauce, and season with salt and pepper. Mix well with a whisk.
  • Add diced potatoes to the mayonaise mixture along with the pickle, green onions, red pepper and celery. Chop egg whites fine and add to the salad. Stir gently, but mix well.
  • Refrigerate until serving time. Enjoy!

Tips:

  • Choose the right potatoes: Waxy potatoes, such as red potatoes or fingerling potatoes, hold their shape well and are ideal for potato salad.
  • Cook the potatoes properly: Boil the potatoes until they are just tender, but not mushy. Overcooked potatoes will fall apart when you mix them with the other ingredients.
  • Cool the potatoes completely: Before you mix the potatoes with the other ingredients, let them cool completely. This will prevent the potato salad from becoming watery.
  • Use a light dressing: A light dressing, such as a vinaigrette or a mayonnaise-based dressing, will allow the flavors of the potatoes and the other ingredients to shine through.
  • Add your favorite mix-ins: Get creative and add your favorite mix-ins to the potato salad. Some popular options include chopped celery, onions, carrots, hard-boiled eggs, bacon, and cheese.
  • Chill the potato salad before serving: Chilling the potato salad for at least an hour before serving will help the flavors to meld and will make the salad more refreshing.

Conclusion:

Bonnie's Mexican potato salad is a delicious and easy-to-make dish that is perfect for any occasion. With its zesty dressing and flavorful mix-ins, this salad is sure to be a hit. Whether you are looking for a side dish for your next barbecue or a main course for a light lunch, Bonnie's Mexican potato salad is a great choice. So next time you are looking for a new potato salad recipe, give this one a try. You won't be disappointed!
