Time 3h37m

Yield 8

Number Of Ingredients 12

½ cup brown sugar
1 tablespoon ground paprika
1 teaspoon dry mustard
¼ teaspoon cayenne pepper
1 (12 fl oz) can caffeinated pepper-type soda (such as Dr Pepper®)
¾ cup ketchup
¼ cup Worcestershire sauce
8 slices bacon
1 large onion, finely chopped
1 clove garlic, minced
¼ cup bourbon
2 (16 ounce) cans baked beans with pork

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix brown sugar, paprika, mustard, and cayenne pepper together in a bowl. Whisk in pepper soda, ketchup, and Worcestershire sauce until brown sugar is dissolved.
  • Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crispy, 3 to 5 minutes. Transfer to a bowl, reserving bacon grease.
  • Stir onion into the bacon grease in the Dutch oven; cook and stir until soft, 3 to 5 minutes. Add garlic; cook and stir for 1 minute. Pour in bourbon, stirring to scrape up browned bits off the bottom with a wooden spoon. Stir bacon strips back in.
  • Pour brown sugar mixture and baked beans into the Dutch oven. Simmer until beans are heated through, about 15 minutes. Arrange remaining 4 slices of bacon on top of the beans.
  • Bake in the preheated oven, covered, until beans are bubbly and sauce is syrupy, about 3 hours.

BOURBON BARBECUE BAKED BEANS

Categories     Bean     Side

Yield 12 servings

Number Of Ingredients 19

6 strips of thick cut bacon
2 medium onions, coarsely chopped
1 red bell pepper, coarsley chopped
1 jalapeño, or more or less to your taste, coarsley chopped
1 can (15 ounces) red kidney beans, drained and rinsed, or 1/4 pound dried red kidney beans
1 can (15 ounces) white kidney beans, drained and rinsed, or 1/4 pound dried white kidney beans
1 can (15 ounces) black beans, drained and rinsed, or 1/4 pound dried black beans
1/2 cup raisins
3/4 cup Kansas City style BBQ sauce
4 tablespoons molasses, any grade
1/4 cup Kentucky Bourbon or Tennessee whiskey
2 teaspoons dry mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf (try not to leave this out)
About the beans. You can use all one type of bean. The beans in the photo were made with white kidneys only.
About the bacon. Substitute hot dogs for bacon and you have Beanie Weenies.
About the peppers. Substitute poblanos for bell peppers. Richer flavor and a little heat.
Optional add-ins. Add 1 teaspoon chili powder or ancho powder and/or 1 teaspoon rosemary leaves (not powder). Add 1 tart apple such as Granny Smith or Jonathan, peeled, cubed, and add it with the whiskey.

Steps:

  • 1) If you plan to use dried beans, follow their instructions for soaking them. If you plan to use canned beans, move on to the next step. 2) Make sure you are using a 2 quart or larger pot or Dutch oven. Cook the bacon over a medium heat. When it begins to brown, flip it, brown the other side, but remove it before it renders all its fat and gets hard. We want bacon that we can cut, not crumble. You will probably need to do the bacon in two batches. And what the heck, go ahead and cook an extra slice or two and eat it when nobody is watching. 3) Pour off the bacon fat into a coffee cup leaving behind about 2 tablespoons and most of the brown bits dissolved in the fat. When the fat in the cup begins to cool, but before it hardens, move it to a plastic tub and store it in the fridge. You can use this later for cooking onions or veggies. 4) Add the onions and peppers and cook them until they wilt. 5) Add everything else. There are three good ways to cook these beans: * On your grill/smoker. If you have a smoker, put them below the meat for about 3 hours at 225F. They will collect flavorful, smoky drippings from the meat laden with seasoning from the rub. Just be sure they don't burn. * In your oven. Put the pot in your oven uncovered for 2 hours at 250F. Stir every 30 minutes to make sure they don't burn. * On the stovetop. Bring to a gentle boil over medium heat and then turn it back to simmer for 30 minutes without a lid. Stir and scrape the bottom with a wooden spoon every 10 minutes to prevent burning and sticking. Try to keep the bay leaf submerged. 6) Remove the bay leaf. Taste and adjust the flavors as you see fit. If you like it spicier, add hot sauce. Add more molasses if you like it sweeter, or salt if you think it needs it. Cook it longer if you want it thicker, or add water if you want it thinner.

BOURBON BAKED BEANS

Bourbon Baked Beans image

Yum! This is a really different take on your everyday baked beans. Since they're slow cooked, the beans have a soft texture. Pineapple adds a little tangy sweet kick to the beans. You do taste the bourbon, but it's not a strong flavor. Try them at your next cookout!

BOURBON BAKED BEANS

Categories     Bean     Side     Kid-Friendly

Number Of Ingredients 15

16 oz. navy beans
3 cups water
2 Tbl. molasses
2 Tbl. tomato paste
1 tsp. dry mustard
1/2 cup chili sauce
1/2 cup bourbon
1/2 cup strong coffee
1 cup fresh pineapple, chopped to a pulp
1 yellow onion, minced
1 cup brown sugar
1/2 lb. bacon, chopped
Salt to taste
Black pepper to taste
Pinch chile flakes

Steps:

  • Soak beans in enough water to cover by double their volume overnight. In the morning, discard the water and rinse beans. In an eight-quart pot, cook bacon over medium heat. Once the bacon has started to brown slightly, add the onions and sweat until translucent. Add tomato paste, stir and cook for one minute. Add the remaining ingredients and beans (except for the salt, which will keep the beans from softening if added early) and cook over low heat for 4-6 hours, or until beans are soft. Once beans have softened, season to taste with salt and cook another hour. You may have to add water to maintain the consistency. If beans are still too wet after the allotted cooking time, then raise heat to medium and simmer until desired consistency has been reached.

BOURBON CHIPOTLE BAKED BEANS

Categories     Bean     Side

Yield 8-10

Number Of Ingredients 13

2 15.5 oz cans Great Northern beans
1/2 cup ketchup
1/4 cup light brown sugar
1/4 cup maple syrup
3 tablespoons honey
2 tablespoons molasses
1 tablespoon Worcestershire sauce
2-3 chipotle peppers, minced, with adobo sauce
1 tablespoon paprika
1/2 cup corn kernels (frozen is fine)
1/2 medium onion, finely diced
4 strips of bacon, raw, cut into 1-inch pieces
2 tablespoons bourbon

Steps:

  • Preheat oven to 275. Whisk together ketchup, brown sugar, syrup, honey, molasses, Worcestershire sauce, chipotle, and paprika. Add beans, corn, bacon, onion, and bourbon and transfer to a baking dish. Cover. Place in oven and bake for 2 1/2 to 3 hours. With 1/2 hour left, remove the cover to allow the top to thicken and caramelize.

Tips:

  • Soak the beans overnight: This will help them cook more evenly and reduce the cooking time.
  • Use a variety of beans: This will give your dish a more complex flavor and texture. Some good options include pinto beans, kidney beans, and black beans.
  • Don't skimp on the bacon: Bacon adds a delicious smoky flavor to the beans. If you don't have bacon, you can use another type of smoked meat, such as ham or sausage.
  • Use a good quality bourbon: The bourbon will add a lot of flavor to the beans, so it's important to use a good one. Look for a bourbon that is at least 80 proof and has a smooth, mellow flavor.
  • Cook the beans until they are tender: This will usually take about 2 hours, but it may take longer depending on the type of beans you are using.
  • Serve the beans with your favorite sides: Some good options include cornbread, mashed potatoes, or coleslaw.

Conclusion:

Bourbon baked beans are a delicious and easy-to-make dish that is perfect for any occasion. Whether you are serving them at a cookout, a potluck, or a holiday dinner, these beans are sure to be a hit. So next time you are looking for a new recipe to try, give bourbon baked beans a try.
