BOURBON FRIED APPLES

Bourbon Fried Apples image

This is a slightly healthier spin on traditional fried apples. The skin is left on, and the reduced butter and sugar are offset with flavor-boosting bourbon, raisins, cinnamon, and lemon juice. I use Cameos for this recipe, as they are naturally sweet and hold their shape well, but if you're using a tarter variety, you may wish to increase the brown sugar and omit the lemon juice. Golden rum can substitute for the bourbon.

Flambe! It's always fun to set food on fire intentionally (setting food on fire accidentally is entirely another matter, as I know first-hand). I like these over ice cream.

Categories     Food & Cooking     Seasonal Recipes     Fall Recipes

Number Of Ingredients 15

3 cups apple cider
1 cup apple cider vinegar
1 cup apple sauce
1 cup sugar
1/2 cup light brown sugar
1/4 cup thinly sliced ginger
1/2 stick cinnamon
1/2 vanilla bean, split in half lengthwise and seeds scraped
6 cardamom pods
2 teaspoons allspice berries
1 1/2 teaspoons crushed red pepper flakes
1/2 teaspoon dry mustard
2 teaspoons minced garlic
1/4 teaspoons salt
3-4 tablespoons Bourbon

Steps:

  • To make the glaze, place all of the ingredients for the glaze except for the Bourbon in a 6-quart pot and cook over medium-high heat. Bring the contents of the pot to a boil, stirring often to dissolve the sugar. Once the mixture has come to a boil, reduce the heat to medium, and allow the mixture to reduce to a glaze consistency, about 30 to 35 minutes longer. Remove the glaze from the stove and strain through a fine-mesh strainer. Stir in the Bourbon, a tablespoon at a time to get the desired flavor and consistency. Reserve until ready to use.

Yield Makes 6 servings

Number Of Ingredients 9

6 7- to 8-ounce Golden Delicious apples
6 tablespoons toffee bits (such as Skor)
3 tablespoons bourbon
3 tablespoons unsalted butter
1 1/2 cups apple cider
3 tablespoons mild-flavored (light) molasses
1 tablespoon sugar
1/4 teaspoon ground ginger
Vanilla ice cream

Steps:

  • Preheat oven to 350°F. Peel skin off top third of each apple. Using small melon baller, scoop out stem and core, leaving bottom intact. Stand apples in 11x7x2-inch baking dish. Place 2 tablespoons toffee bits around apples in dish. Divide remaining bits among cavities of apples. Add 1/2 tablespoon bourbon and 1/2 tablespoon butter to cavity of each apple. Whisk cider, molasses, sugar and ginger in bowl; spoon over and around apples.
  • Bake apples until tender, basting often with pan juices, about 1 hour 20 minutes. Transfer apples to bowls. Pour juices from dish into small saucepan. Boil juices until thick enough to coat spoon, about 6 minutes. Spoon sauce over apples. Serve apples warm with vanilla ice cream.

Tips:

  • For best results, use firm, tart apples that hold their shape well when cooked, such as Granny Smith or Honeycrisp.
  • If you don't have apple cider, you can substitute apple juice or water.
  • Be careful when flaming the apples. The alcohol will ignite quickly, so stand back and use a long lighter or match.
  • Don't overcook the apples. They should be tender but still hold their shape.
  • Serve the apples warm with your favorite toppings, such as vanilla ice cream, whipped cream, or caramel sauce.

Conclusion:

Bourbon flamed apples are a delicious and easy dessert that can be enjoyed by people of all ages. They are perfect for a special occasion or a simple weeknight treat. The combination of sweet apples, smoky bourbon, and warm spices is sure to please everyone at the table. So next time you're looking for a dessert that is both impressive and delicious, give these bourbon flamed apples a try.
