1 (3 1/2-lb) chicken, cut into 8 serving pieces
1 lb shallots, thinly sliced
1 head garlic, cloves separated and peeled
1/4 cup balsamic vinegar

  • Cook bacon in a deep 12-inch heavy skillet over moderately low heat, stirring, until crisp, about 8 minutes. Transfer with a slotted spoon to paper towels to drain and reserve bacon fat in skillet.

Also, it has less calories than the Nutrition Facts calculate because you remove the skin after browning.

8 bone-in skin-on chicken thighs (about 3 pounds, trimmed of excess fat and skin)
salt & fresh ground pepper
1 tablespoon olive oil
1 large onion, halved and sliced about 1/4 inch thick (about 2 cups)
1 tablespoon tomato paste
3 garlic cloves (minced or pressed through garlic press, about 1 tablespoon)
1 anchovy fillet, minced (about 1 teaspoon)
1 (14 1/2 ounce) can diced tomatoes
2 cups low sodium chicken broth
1/4 cup dry red wine
1/4 teaspoon red pepper flakes
1 1/2 tablespoons chopped fresh thyme leaves
1 bay leaf
1/2 lb green beans, ends removed and cut in half
1/2 cup balsamic vinegar

Steps:

  • Adjust oven rack to lower-middle position; heat oven to 350 degrees. Season chicken thighs with salt and pepper. Heat oil in nonreactive Dutch oven over medium-high heat until shimmering but not smoking; add chicken thighs skin-side down and cook without moving them until skin is crisped and well browned, 10 to 12 minutes.
