1/4 cup vegetable oil
2 pounds cube steak, cut into 6 pieces
Salt
pepper
1/2 cup flour plus 1 tablespoon
3 large onions, sliced thinly
2 cups low-sodium chicken stock or water

Steps:

  • Heat oil in large, heavy-bottomed skillet over medium heat. Sprinkle both sides of steak with salt and pepper.
  • Put 1/2 cup flour on a plate, and coat each piece of meat. Shake off excess flour and add steak to pan, working in batches. Cook about 3 or 4 minutes per side, or until browned, and remove to a platter.
  • Add onions to skillet and cook about 3 minutes or until wilted. Stir to help loosen browned bits from bottom of pan. Lower heat, then sprinkle with 1 tablespoon flour. Stir constantly, cooking for about 4 minutes.
  • Gradually add water or stock, continuing to stir to keep lumps at bay. Bring mixture to a boil, then turn heat to low and add steaks to pan. Simmer, partly covered, for 45 minutes. Remove to a platter and taste pan sauce, correcting for seasoning.

1/4 cup coconut oil or other paleo-friendly cooking fat
2 pounds cube steak, cute into 4-6 equal size pieces
1/2 cup cassava flour
1/2 teaspoon sea salt
1 large onion, thinly sliced
2 cups bone broth
2 minced garlic cloves
2 tablespoons fresh thyme leaves

Steps:

  • In a large skillet with a cover, heat oil over medium heat.
  • Meanwhile, season steaks with salt, then coat each piece of meat with flour on both sides.
  • Cooking in batches if necessary, brown the steaks without moving them for 3-4 minutes, then flip and brown on other side for 3-4 minutes. Remove from pan and set aside.
  • Add onions to skillet and cook until softened and beginning to brown (about 6-7 minutes).
  • Add garlic and cook until fragrant (about 1 minute).
  • Slowly add broth, stirring and scraping bottom of skillet to dislodge browned bits. Bring to a boil and then reduce to low.
  • Add fresh thyme leaves and stir to distribute.
  • Return steaks in a single layer so that the are not completely submerged by gravy.
  • Cover and simmer on low for 45 minutes.

2 slices bacon, chopped
2 tablespoons extra-virgin olive oil
1 large onion, halved and thinly sliced
3 sprigs thyme
Kosher salt and freshly ground pepper
1 12-ounce bottle brown ale
1/2 cup low-sodium beef broth
6 ounces extra-wide egg noodles
1/2 cup frozen peas
2 tablespoons unsalted butter
4 cube steaks (about 1 1/4 pounds)
2 tablespoons chopped fresh parsley

Steps:

  • Cook the bacon in a large nonstick skillet over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Add 1 tablespoon olive oil, then add the onion and cook until softened, about 3 minutes. Add the thyme sprigs, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is lightly browned, about 5 more minutes. Add the beer, reduce the heat to medium and simmer until reduced by three-quarters, about 15 minutes. Increase the heat to high, pour in the beef broth and simmer until thickened, about 2 more minutes; season with salt and pepper. Discard the thyme.
  • Meanwhile, bring a pot of salted water to a boil. Add the noodles and cook as the label directs, adding the peas in the last 2 minutes of cooking. Drain and return to the saucepan. Stir in 1 tablespoon butter and season with salt and pepper; keep warm.
  • Season the steaks with salt and pepper on both sides. Heat the remaining 1 tablespoon each olive oil and butter in a large nonstick skillet over medium-high heat. Working in batches, cook the steaks until lightly browned and just cooked through, about 1 minute per side. Serve with the noodles; top with the braised onions and parsley.

This is an original Czech recipe for slow-braised beef cubes in garlic sauce. The dish is very popular in the Czech Republic, often served with potato dumplings and stewed spinach.

1 and 1/2 lbs (680 g) beef chuck or round
3 cloves of garlic
1 Tbsp all-purpose flour
2 Tbsp pork lard (or sunflower/Canola oil)
1 onion (large)
1 and 1/2 tsp salt
water (in which the meat will stew)

Steps:

  • Cut the beef into cubes about 1 inch (3 cm) in size. Peel the onion and chop it finely. Peel and press the garlic.
  • Salt the meat cubes and mix with garlic.
  • Heat the lard or oil in a frying pan to a higher temperature and brown the meat in it. The meat will probably release its juices. Cook until the juices evaporate and the meat cubes are golden brown. Stir.
  • Remove the fried meat and fry the onion in the same fat. If it sticks to the bottom of the pan, add a tablespoon of water. Using a flat spatula, scrape the drippings from the bottom of the pan and stir them into the onions.
  • Return the beef cubes to the onions, cover with water so that the meat is half submerged. Cover with a lid, turn the heat down to a minimum and simmer until the beef is tender. Stewing time for beef cubes: 2-3 hours.
  • At the end of the stewing (the meat is already soft and tender), remove the lid, add a little water if necessary and dust the surface of the stew with flour through a sieve. Put the lid back on and let the flour steam for 15 minutes at low heat - do not stir!
  • Finally, season with salt to taste, stir and serve.

1 lb cube steak, usually top round (4 pieces at 1/4 pound each)
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 tablespoons butter
2 tablespoons canola oil
1/2 medium onion, thinly sliced
2 garlic cloves, minced
1/2 lb button mushroom, stems discarded and thinly sliced
3/4 cup red wine
1 tablespoon Worcestershire sauce
1/2 tablespoon Dijon mustard
3/4 cup beef stock

Steps:

  • Place oven rack in lower middle position and preheat to 250°F Meanwhile, stir together flour, salt, and black pepper on a large plate. Dredge both sides of each cube steak in flour mixture, shaking off excess.
  • Add one tablespoon each of oil and butter to Dutch oven and place over medium high heat. When oil is shimmering, add two cube steaks. Cook until golden brown, about four minutes on each side. Remove cube steaks to a plate and set aside. Repeat with remaining two cube steaks, adding more oil and butter if necessary.
  • Carefully pour out any fat left in Dutch oven, then add remaining butter and oil. Turn heat to medium-high, and when oil shimmers, add onion, garlic, and mushrooms. Cook, stirring frequently, until onion is caramelized, about three minutes. Add wine. Using wooden spatula, scrape up any browned bits from bottom of pan.
  • Add Worcestershire sauce, mustard, and stock. Stir well, then add cube steaks, nestling them into sauce as much as possible. Cover dutch oven and place on lower-middle rack of oven. Cook until very tender, about 25 minutes. Serve with mashed potatoes.
