You may have tasted Brazilian vinaigrette before, but you may have not known it. This sauce is the key component in many traditional Brazilian dishes and salads. If you have ever had a salad with tomatoes, onions, cucumbers, and a citrus-based dressing, then you have had Brazilian vinaigrette. Unlike dressings made with vinegar, Brazilian vinaigrette uses fresh citrus such as oranges, limes, or lemons to create a tart and refreshing dressing. The citrus and oil are then emulsified together either by a blender or by whisking vigorously by hand. The result is a light, creamy sauce that complements the bold flavors of Brazilian cuisine.

BRAZILIAN VINAIGRETTE
This can be used over meat, fish or chicken but I absolutely LOVE to drizzle a little over white rice. It's great over salad too.

Steps:
- Dice peppers, onions, and tomatoes.
- Mix all of the ingredients in a bowl.
- Let mixture sit for a while to bring out the flavors. (I prefer the vinaigrette a little on the colder side so I refrigerate it).
- ** Side note: If you're going to add salt do it just before serving (salt will cause the tomatoes to dehydrate.) Enjoy!
BRAZILIAN VINAIGRETTE SAUCE (MOLHO DE VINAGRETE)
Traditionally served over meat and/or beans this sauce can be as hot as you like it. As a guide - cayenne peppers are roughly 10 times hotter than your run-of-the-mill jalapeno. As Ms. Hilton would say _"That's hot!"_ ;-)

This delicious salmon recipe is courtesy of Margot Olshan. At her Connecticut cafe, Margot finishes this salmon dish in the oven. But for a home cook, finishing on the stove works best.

Steps:
- Coat salmon with olive oil and season with salt and pepper. Add to a medium skillet set over medium-high heat, skin-side down. Cook until golden brown, 1 to 2 minutes. Turn fish and continue cooking until fish is still pink in the center, but flakes apart easily with a fork, about 5 minutes.
- Divide spinach evenly between two serving plates; top with rice. Set salmon over rice. Drizzle 1/4 cup vinaigrette and 1 tablespoon chimichurra sauce over each piece of salmon; garnish each with a lime wedge. Serve immediately.

Steps:
- In a bowl, mix green and red peppers, onions, tomatoes, vinegar and olive oil. Hint: add salt to the salsa right before serving it. Salt dehydrates the tomatoes in the mixture if let for long time. Brazilian Vinaigrette Salsa is great with Brazilian Barbecues or on top of any meat, fish and sausage.
Tips:
- Use fresh, ripe tomatoes for the best flavor.
- If you don't have red onion, you can use a white or yellow onion instead.
- Be sure to finely chop the onion so that it blends well with the other ingredients.
- Use a good quality olive oil for the best flavor.
- If you don't have white wine vinegar, you can use another type of vinegar, such as red wine vinegar or apple cider vinegar.
- Be sure to whisk the vinaigrette well before using it so that the ingredients are well blended.
- Taste the vinaigrette and adjust the seasonings to your liking.
- Serve the vinaigrette immediately or store it in the refrigerator for later use.
Conclusion:
A Brazilian vinaigrette is a light and refreshing dressing that is perfect for salads, grilled meats, and fish. It is easy to make and can be customized to your liking. So next time you are looking for a healthy and flavorful dressing, give Brazilian vinaigrette a try!
